Looking for a refreshing fruit salad? My mom had this at a party - she described what she thought was in it and we both have tried our own. This is my version. My mom used -Instant Vanilla Pudding - mine had a different taste using the French Vanilla (maybe sweeter) - but they were both very good! My serving size may be off - it's hard to calculate. It makes a nice bowl of fruit salad. I made this for 8 of us and I had some leftover. It was very good tho - it kept for several days and the fruit never changed colors.

1 (14 1/2 ounce) can peaches, sliced/diced w/syrup
1 (17 ounce) can fruit cocktail in syrup
1 (15 ounce) can mandarin oranges, drained
1 (20 ounce) can pineapple chunks in syrup
1 (16 ounce) jar maraschino cherries, drained
2 bananas, sliced
1 granny smith apple, chopped
1 Red Delicious apple, chopped
1 (3 1/2 ounce) box French vanilla instant pudding
1 (3 1/2 ounce) box instant lemon pudding

Steps:

  • This is the EASY part – In a large bowl; mix peaches with syrup, fruit cocktail with syrup, mandarin oranges-drained, pineapple w/syrup, cherries-drained, bananas, apples and pudding mixes (do not make the pudding – just use the powder).
  • Mix well – chill then serve.
  • Please note chill time is cook time.

You can substitute the mandarin orange juice instead of the pineapple juice. Prep time includes letting it set overnight in the fridge.

1 cup sugar
1/2 teaspoon salt
3 eggs, beaten
2 tablespoons flour
2 (11 ounce) cans mandarin orange sections, drained
1 (10 ounce) jar maraschino cherries, drained
3/4 cup shredded coconut
1 can crushed pineapple, drained reserving juice
1 can pineapple chunk, drained reserving juice
1 3/4 cups reserved pineapple juice
1 (8 ounce) bag miniature marshmallows
1 (8 ounce) container Cool Whip
1 (16 ounce) box acini di pepe pasta, cooked and drained

Steps:

  • Cook sugar, salt, eggs, flour and pineapple juice until thick and bubbly, cool.
  • When cooked mixture is fully cooled, pour over pasta.
  • Mix well, cover and store in fridge overnight.
  • In the morning, add fruit, Cool Whip and marshmallows.
  • Mix well.

2 tablespoons honey or 2 tablespoons agave nectar
3/4 teaspoon dried lavender
1/8 teaspoon fresh ground pepper
1 tablespoon fresh lime juice
1 peach, -sliced into 1/2-in . thick wedges
1 nectarine, sliced into 1/2-in . thick wedges
1 large plum, sliced into 1/2-in . thick wedges
1 cup raspberries
1 cup blackberry
3/4 cup blueberries
1 tablespoon small whole mint leaf

Steps:

  • 1. Make sauce: Combine agave nectar or honey, 1/3 cup water, lavender, pepper & a pinch of salt in a small saucepan. Bring to a simmer over medium heat, stirring until agave/honey has dissolved. Remove from heat and cover. Let steep for about 15-20 minutes. Strain into a bowl and discard lavender and stir in lime juice.
