1 lb rump steak, finely sliced and slightly frozen, it's easier to cut frozen
2 tablespoons soy sauce
1/2 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
2 tablespoons vegetable oil
1 lb broccoli, chopped to bite sized florets
1 1/2 teaspoons cornstarch
1/2 cup beef broth
1 teaspoon soy sauce
1/4 teaspoon sesame oil

Steps:

  • Put meat in a bowl with 2 Tbs soy sauce and ginger mix well.
  • Heat your wok or frying pan to very hot.
  • Add oil and coat the sides well.
  • Add beef and broccoli and stir-fry until meat changes color (about 2 minutes).
  • Dissolve cornstarch into the beef stock and stir in remaining soy sauce and sesame oil.
  • Add to the beef and broccoli -- stir until the sauce thickens.
  • Serve over rice or noodles.

This is VERY easy and the ingredients can be kept on hand. I make this when I have to bring a dish somewhere and don't have time to run to the store, or for last minute company. This was my mother-in-laws recipe from the 1970's, not sure where she got it. Simple but so tasty!

1 (14 3/4 ounce) can whole kernel corn, drain
1 (14 3/4 ounce) can creamed corn
1 (10 ounce) box frozen chopped broccoli (break up)
2 1/2 cups crackers, 'Chicken in a Biskit' by Nabisco, coarsely crushed
1/2 cup unsalted butter, melted
salt and pepper

Steps:

  • Mix corn, creamed corn, frozen broccoli, 1 cup of crushed crackers, and salt and pepper in a small casserole dish.
  • Spread the remaining crackers on top.
  • Pour the melted butter evenly over the crackers.
  • Bake uncovered at 350°F for 30 minutes.
  • Baking longer than 30 minutes may burn the crackers so watch carefully at the end.

I've seen a number of broccoli kugel recipes which are quick and easy, but I always had unsatisfactory results with them (broccoli always came out hard and dry on top). This one takes a bit more prep time, but the results are delicious. It's adapted from a recipe by Giora Shimoni.

2 lbs frozen broccoli
5 large eggs
3/4 cup mayonnaise
1 finely chopped onion
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon baking powder
1/4 cup whole wheat flour
1/2 tablespoon onion soup mix
1/2 tablespoon chicken soup powder

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cook broccoli in a pot of boiling water until soft enough to mash with a fork.
  • Drain, then mash broccoli.
  • Thoroughly mix together broccoli and remaining ingredients in a large bowl. (I've used low fat mayo with mixed results, so usually prefer full fat mayo.).
  • Pour mixture into greased 8 x 8 baking pan. Bake for 40-45 minutes or until knife inserted into the center comes out clean.

3/4 lb fettuccine
2 cups fat-free evaporated milk
3/4 cup parmesan cheese

5 1/2 tablespoons butter
1 dash nutmeg

salt and black pepper
1 (4 ounce) can mushrooms, drained

Steps:

  • Boil pasta for 5 minutes; drain.
  • Reserve 1 cup pasta water and set aside.
  • Add all ingredients except parmesan cheese to large skillet.
  • Cook about 10 minutes until broccoli is tender.
  • Add pasta water to pan until you see it coming up through pasta.
  • Add cheese to thicken.
