2 cups quick oats (not instant)
1/4 cup walnuts, chopped
1/2 cup shredded coconut
1/2 cup raisins (or chopped dates)
2 bananas, mashed
1/4 cup unsweetened applesauce (optional)
1 tablespoon date sugar (optional)

Steps:

  • Preheat oven to 350 degrees. Mix ingredients together in a large bowl. Press dough in a 9"X 9" baking pan. Bake for 30 minutes. Cool on wire rack. When cool, slice into squares or bars and serve. ENJOY!
  • Add the applesauce & date sugar if you'd like a sweeter, moister version of these bars.
  • I usually double this recipe since everyone loves these bars and they disappear so quickly!

1/2 cup shredded coconut

2 large ripe bananas, mashed
1/4 cup unsweetened applesauce (optional; see note)
1 tablespoon date sugar (optional; see note)

Steps:

  • Preheat oven to 350 degrees. Mix all the ingredients in a large bowl until well combined. Press into a 9-by-9-inch baking pan and bake for 30 minutes. Cool on a wire rack. When cool, cut into squares or bars. Note: Add the applesauce and date sugar for sweeter, moister bars

I named this recipe Yummy Banana Bars because they are..lol...but I got the recipe(and the pic) off of allrecipes and have been making them for years. 1/2 c butter, softened
1 c sugar
1/2 c milk
1 tsp vanilla extract
1 tsp lemon juice
1 1/2 c unbleached white flour
1/2 tsp baking soda
1/2 tsp salt
1 1/2 very ripe bananas, mashed
1/2 c walnuts or pecans, finely chopped (optional)
GLAZE:
3 c powdered sugar
1/4 tsp salt
1/2 tsp vanilla extract
1/2 tsp lemon juice
1/2 very ripe banana, mashed
1 Tbsp butter, melted

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 9"x12" cake pan with cooking spray. Set aside.
  • 2. I mixer bowl, cream butter and sugar together. Stir in vanilla, lemon juice and milk. Stir together dry ingredients in a bowl and add to creamed mixture. Mix until smooth but don't overbeat. Stir in mashed bananas and nuts if desired. Pour batter into prepared pan and smooth out. Bake for 25-30 minutes until they test done with a toothpick. Adjust time for muffins. Cool completely in pan.
  • 3. While bars are baking, whisk together glaze ingredients. Pour or spread glaze onto cooled bars as thin ot thick as desired. You may have extra glaze and when I double the recipe I don't double the glaze. Let set to firm up glaze.(I have been known to sneak a corner while still hot out of the oven..yum) Cut into 1" x 2" bars. Enjoy!

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your banana bars will be.
  • Don't overmix the batter. Overmixing can make the banana bars tough.
  • Bake the banana bars until a toothpick inserted into the center comes out clean. Overbaking can make the banana bars dry.

  • Store the banana bars in an airtight container at room temperature for up to 3 days. You can also freeze the banana bars for up to 2 months.
