1/4 cup cider vinegar
1 cup mayonnaise
1/3 cup poppy seeds
1/3 cup honey
2 teaspoons kosher salt

1 medium cabbage, cored, finely shredded
2 large carrots, peeled, julienne
1 bunch scallions, thinly sliced
1/2 cup finely minced parsley leaves, optional
4 Fuji apples, peeled, cored, julienne

Steps:

1 tablespoon lemon juice, or to taste

1 bag(s) coleslaw mix (I use the large bag, 14-16 oz)
2 - Granny Smith apples (diced)
2 tablespoon(s) apple cider vinegar
3 tablespoon(s) granulated sugar
3/4 cup(s) mayonaise
- salt & pepper, to taste
2 - Macintosh apples (diced)

Steps:

  • Place coleslaw mix and apples in a mixing bowl.
  • Add mayonnaise, sugar, salt, and pepper. Then add the apple cider vinegar.
