8 c artisan cranberry walnut bread (can use other breads such as raisin, cinnamon or plain white bread)
2 c heavy whipping cream
2 c whole milk
1/2 c unsalted butter
4 eggs
4 tsp vanilla extract
2 Tbsp ground cinnamon
SAUCE
2/3 c heavy cream
2 c granulated sugar
1 c unsalted butter
4 Tbsp rum extract (I use Adam's Jamaican rum extract)

Steps:

  • 1. Preheat your oven to 350 degrees.
  • 2. Coat a large casserole dish with non-stick baking spray, I use Baker's Joy.
  • 3. Cut bread into 1" pieces, placing them in a large mixing bowl.
  • 4. Mix whipping cream and milk together. Stir in 1/2 cup of unsalted butter and cook over a medium heat until butter is melted.
  • 5. Stir this milk mixture into the bowl of bread cubes. Let mixture stand for 20 minutes so liquid can absorb into bread pieces.
  • 6. Beat eggs slightly to blend. Add vanilla and ground cinnamon.
  • 7. Pour into mixture. Mix well.
  • 8. Pour into prepared baking dish.
  • 9. Bake for 1 to 1 1/2 hours until bread pudding is set and golden brown.
  • 10. SAUCE: Put heavy cream, butter, and sugar in a saucepan. Cook on low heat until sugar is dissolved. Do not boil. Add rum extract and stir well.
  • 11. Pour rum sauce over hot bread pudding just before serving.
  • 12. Keep refrigerated in separate containers and heat before serving leftover bread pudding.

30 Ritz crackers, fine crumbs
2 tablespoons butter
2 (4 ounce) boxes sugar-free instant vanilla pudding mix
1 1/2 cups skim milk or 1 1/2 cups 1% low-fat milk
2 quarts low-fat vanilla frozen yogurt, softened

Steps:

  • Preheat oven to 350°F.
  • Melt butter in baking dish in microwave or oven.
  • Mix cracker crumbs with melted butter and place into 350°F oven. Bake for 5 minutes.
  • Meanwhile, mix pudding with milk.
  • Add softened frozen yogurt to pudding and milk and mix well with mixer.
  • Add pudding to bowl and top with baked crumbs.
  • Refrigerate until set.

60 ritz crackers, crushed
1 stick butter
1 1/2 c milk
1/2 gal vanilla ice cream
2 box (3 oz each) instant vanilla pudding

Steps:

  • 1. Preheat oven to 350
  • 2. Melt butter. Mix with crackers. Press into 13 x 9" pan. Bake 5 min. Let cool.
  • 3. Mix ice cream and milk until thick (milkshake like). Then add pudding. Mix well. Pour over crust. Refrigerate for 8 hours.

So creamy good! We always enjoy rice pudding this time of year and last night was no exception. To me nothing says winter and holidays more than rice pudding. Enjoy!

1 2/3 c water
1/4 tsp salt
1 c basmati rice
3 c milk
1 c heavy cream
3/4 c sugar
1 tsp vanilla extract
1/2 tsp cinnamon
1 egg yolk from large egg, slightly beaten

Steps:

  • 1. In a heavy bottomed, medium saucepan or dutch oven ( I used my cast iron dutch oven. ) over medium high heat, bring rice, water and salt to a simmer. Cover and lower heat - continue cooking & stirring until all water is absorbed. 10 - 12 minutes.
  • 2. Add the cream, sugar, vanilla and milk. Stir until well combined. Whisk in the cinnamon. Simmer for 35 - 40, minutes or until just about desired thickness, making sure to stir often so as not to burn or stick.
  • 3. When the pudding is just about finished, add some of the milk mixture to the egg yolk, stirring briskly to temper, quickly stir this mixture back into the rice and cook a few more minutes.
  • 4. I removed mine while there was still a bit of liquid as it will be absorbed more as the pudding cools. Pour into a large bowl and cover with plastic wrap to avoid a skin forming on top of your pudding.
  • 5. Chill until ready to serve. I served with a dollop of whipped cream and a sprinkle of cinnamon. I also thinned down some canned cherries with lemon juice & water and added a dollop for those who preferred.

Tips:

  • When measuring flour, use the scoop and sweep method to ensure accuracy. Avoid scooping flour directly from the bag, as this can result in a denser pudding.
  • For a smooth pudding, make sure to whisk the milk and sugar mixture until the sugar is completely dissolved before adding the cornstarch slurry.
