Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 15

6 ears fresh corn, shucked, kernels removed and reserved, cobs reserved
2 cloves garlic
1 bay leaf
1 onion, quartered
1 tablespoon whole coriander seed
1 teaspoon kosher salt
Olive oil, for drizzling
1/4 pound thick-cut bacon, cut into lardons
1 cup minced yellow onion
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
Zest of 1 lime
2 tablespoons unsalted butter
1/2 cup sour cream or Greek yogurt
1/2 cup finely chopped fresh cilantro

Steps:

  • For the corn stock: Put the corn cobs, garlic, bay leaf, onion, coriander, salt and 2 quarts water in a large pot and bring to a boil. Reduce the heat to a simmer and cook to reduce the liquid to 2 cups, about 45 minutes. Strain and reserve, keeping the stock warm.
  • For the creamed corn with lime: Heat a large saucepan over medium heat and drizzle with olive oil. Add the bacon and cook, stirring as needed, until crisp and the fat is rendered, about 10 minutes. Add the onions, garlic and a pinch of salt and cook until the onions have softened, another few minutes. Add the reserved corn kernels, lime zest and corn stock, bring to a simmer and cook until the mixture thickens and reduces, 12 to 15 minutes. Remove the pan from the heat and stir in the butter, sour cream and cilantro. Taste and season with salt and pepper.

YUM YUM CORNBREAD

Yum Yum Cornbread image

My mom started making this cornbread when I was a kid and it's always been our favorite. So easy, and nothing better!! The sour cream makes it so buttery tasting, you don't even have to butter it, but then who wouldn't want extra butter??

Time 45m

Number Of Ingredients 6

1 c self rising cornmeal
1/2 c vegetable oil
1/2 tsp salt
2 eggs
8 oz sour cream
4 oz cream style corn

Steps:

  • 1. Combine cornmeal and oil. Add eggs and stir. Add remaining ingredients & bake @ 400 degrees for 25 to 30 mins or until done!!

Tips:

  • Use fresh corn on the cob: Fresh corn on the cob is the best choice for this recipe. It is sweeter and has a better texture than frozen or canned corn.
  • Cook the corn properly: Overcooked corn will be tough and chewy. Cook it just until it is tender, about 5-7 minutes.
  • Use a good quality mayonnaise: Mayonnaise is the base of the Yum Yum sauce, so it is important to use a good quality brand. Look for a mayonnaise that is made with real eggs and oil, and avoid brands that contain high fructose corn syrup or other additives.
  • Season the sauce to taste: The Yum Yum sauce can be seasoned to taste with salt, pepper, and garlic powder. You can also add a bit of cayenne pepper for a spicy kick.
  • Serve the corn immediately: Yum Yum corn is best served immediately after it is made. The sauce will start to thin out if it sits for too long.

Conclusion:

Yum Yum corn is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up fresh corn on the cob, and it is sure to be a hit with your family and friends.
