Truly the easiest lasagna recipe you'll ever make! No pre-cooking lasagna noodles, no grating cheeses, no homemade sauces. Yet it's so perfectly delicious!!

1 lb. 91% lean ground beef*
1 (25 oz) jar marinara sauce, (preferably Rao's tomato basil**)
1/2 cup vegetable broth
6 uncooked lasagna noodles ((not no boil, preferably use Barilla))
1 (15 oz) container ricotta cheese ((whole or part skim))
1 (8 oz) pkg. shredded mozzarella cheese***
1/2 cup grated or finely shredded parmesan cheese
2 Tbsp Chopped fresh basil or parsley ((optional))

Steps:

  • Preheat oven to 375 degrees. Spray a 12 by 8-inch baking dish with non-stick cooking spray.
  • Heat a 12-inch non-stick skillet over medium-high heat. Crumble in beef and cook and break up beef until cooked through.
  • Remove from heat and stir in marinara sauce and vegetable broth (I like to swish the vegetable broth around in the empty jar of marinara sauce to remove any excess, totally optional).
  • To assemble lasagna, spread 1/3 of the marinara sauce (about 1 1/2 cups) into bottom of baking dish. Top with 3 uncooked lasagna noodles.
  • Spread 1/2 of the ricotta over the noodles using the back of a spoon. Top evenly with 1/2 of the mozzarella (1 cup) and 1/2 of the parmesan (1/4 cup). Top with another 1/3 of the sauce.
  • Add 3 more uncooked lasagna noodles then spread evenly with with remaining 1/2 of the ricotta. Pour and spread over last 1/3 of the sauce. Top with remaining 1/2 of the mozzarella and parmesan.
  • Cover tightly with foil (you can grease first if the top of the lasagna will be touching the foil so cheese doesn't stick), bake 40 - 45 minutes until pasta is fairly tender.
  • Remove foil then continue to bake uncovered 10 minutes, or until lasagna is just tender (not soggy. There will seem to be a little liquid on the sides still). Let rest 5 minutes before slicing. Garnish with fresh basil or parsley if desired.

I found this recipe on a low carb site and modified it slightly to suit our tastes. We had it for dinner last night and it was AWESOME!! Very yummy and the flavor of all those fresh veggies blended beautifully with the sauce! DH went back for seconds, so this is definitely a keeper. Add a side salad and your meal is complete!

1 1/2 lbs ground beef
1/2 lb sweet Italian sausage link, removed from casings
1 small onion, diced
1/2 green bell pepper, diced
4 garlic cloves, minced
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 1/2 teaspoons dried basil
1 teaspoon dried oregano
1 teaspoon dried rosemary, crumbled
1 cup water
16 ounces whole milk ricotta cheese
2 eggs, lightly beaten
1/2 cup fresh parsley, chopped or 1/4 cup dried parsley
5 large mushrooms, sliced thin
2 medium zucchini, sliced lengthwise
1 lb spinach, steamed
2 cups shredded mozzarella cheese
1/2 cup shredded parmesan cheese

Steps:

  • Brown the meat and sausage in a large frying pan.
  • When meat is about half done, add the onion, bell pepper, and garlic and continue cooking until the onion is transparent.
  • Add the tomato sauce, paste, water and seasonings; mix well.
  • Cover and simmer for 20 minutes, stirring occasionally.
  • Beat the eggs and ricotta together; season to taste with salt and pepper.
  • Preheat oven to 325° and spray a 9x13-inch pan with olive oil cooking spray.
  • Spread 1/2 of the meat mixture in the bottom of the pan.
  • Top with sliced zucchini.

It's perfect in the summer when I have tons of garden-fresh zucchini and herbs, but I also love making it during the colder months when I want something hot and comforting. Although it takes a little longer than most of my recipes, it's totally worth it!

1 1/4 teaspoons kosher salt
1 teaspoon olive oil
1/2 large onion, chopped
3 garlic cloves, minced
1 (28-ounce) can crushed tomatoes
2 tablespoons chopped fresh basil
Freshly ground black pepper
3 medium zucchini
Cooking spray or oil mister
1 1/2 cups part-skim ricotta cheese
1/4 cup grated Parmigiano-Reggiano cheese
1 large egg
4 cups shredded part-skim mozzarella cheese (16 ounces)

Steps:

  • Heat a large, deep nonstick skillet over high heat. Add the meat, season with 1/2 teaspoon of the salt, and cook, using a wooden spoon to break the meat into small pieces as it browns, 4 to 5 minutes. Drain the meat in a colander and wipe the skillet with a paper towel.
  • Put the skillet over medium heat. Add the olive oil and onion and cook, stirring, until soft, 3 to 4 minutes. Add the garlic and cook 1 minute. Return the meat to the pan, add the tomatoes, basil, 1/4 teaspoon of the salt, and the black pepper to taste. Reduce the heat to low, cover, and simmer, stirring occasionally, 25 minutes. Remove the lid and simmer uncovered 10 minutes, until thickened.
  • Meanwhile, slice the zucchini lengthwise with a mandolin into 1/8-inch-thick slices (you should have at least 30 to 35 long zucchini ribbons). Lightly salt the zucchini with the remaining 1/2 teaspoon salt and set aside for 15 minutes. Blot the zucchini with paper towels.
  • Preheat a grill to medium heat (or preheat a grill pan over medium heat).
  • Oil the grill grates or spray the grill pan with cooking spray to avoid sticking. Grill the zucchini until cooked and slightly browned, 2 to 3 minutes on each side. Transfer to a plate lined with paper towels and press to absorb excess moisture.
  • Preheat the oven to 375°F.
  • In a medium bowl, combine the ricotta, Parmesan, and egg. Spread 1/2 cup of the meat sauce in the bottom of a 9 × 13 × 2 1/2- inch baking dish. Make another layer of zucchini, top with 1 1/2 cups meat sauce, 1/2 cup ricotta mixture, 1 cup mozzarella. Repeat the layers with the remaining ingredients for a total of 3 layers. Finish the lasagna by topping with the remaining zucchini and meat sauce. Cover the dish with foil.
  • Bake for 30 minutes, remove the foil, and bake 20 minutes uncovered. Add the remaining 1 cup mozzarella and bake uncovered until bubbling and the cheese is melted, 10 more minutes. Let stand for 5 to 10 minutes before cutting into 8 pieces.
