Number Of Ingredients 11

1 tablespoons olive oil
1 tablespoons butter
2 cloves garlic
2 units shallots
1 cups vodka
1 cups chicken stock
32 ounces tomatoes
1 units salt and pepper
16 ounces pasta
0.5 cups heavy cream
20 leaves basil

Steps:

  • Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan, 3 turns around the pan in a steady stream will equal about 1 cup. Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock and tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.
  • While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.
  • Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.

Tips:

  • For a richer flavor, use heavy cream instead of milk. You can also add a tablespoon of grated Parmesan cheese to the sauce for extra creaminess.
  • If you don't have vodka, you can substitute it with white wine or chicken broth. However, vodka adds a unique flavor to the dish that you won't get from other liquids.
  • Be careful not to overcook the pasta. It should be cooked al dente, or slightly firm to the bite. Overcooked pasta will be mushy and won't hold the sauce as well.
  • Add the cooked pasta to the sauce immediately after it's been drained. This will help the pasta absorb the sauce and prevent it from sticking together.
  • Garnish the pasta with fresh parsley or basil before serving. This will add a pop of color and flavor to the dish.

Conclusion:

Vodka cream pasta is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great way to impress your friends and family. With a few simple ingredients and a little bit of time, you can create a meal that everyone will love. So next time you're looking for a new pasta recipe, give vodka cream pasta a try. You won't be disappointed.
