Prime Rib Roast with Merlot Gravy and Yorkshire Puddings image

a 2-rib tied prime beef rib roast (from small end; about 4 1/2 pound trimmed)
2 teaspoons kosher salt
For vegetables
3 ounces pearl onions (about 16)
3 carrots
3 celery ribs
2 Portobello mushrooms
2 1/2 tablespoons vegetable oil
1 1/2 cups Merlot or other dry red wine
1 cup veal or beef demiglace*
2 tablespoons red-currant jelly
3/4 teaspoon drained bottled horseradish
3 tablespoon chopped fresh flat-leafed parsley leaves
Accompaniment: 4Yorkshire puddings

Steps:

  • Preheat oven to 450°F.
  • Put beef, fat side up, in a shallow flameproof roasting pan. Sprinkle salt over top and season with pepper. Roast beef in lower third of oven 20 minutes. Reduce oven temperature to 350°F. and roast beef 1 hour and 15 minutes more, or until a meat thermometer inserted 2 inches into center of meat registers 115°F. Transfer beef to a cutting board, reserving pan juices in pan, and let stand 25 minutes. Beef will continue to cook as it stands, reaching 125°. (medium-rare).
  • Prepare vegetables while beef is roasting:
  • Trim onions. Diagonally cut carrots and celery into think slices. Remove stems from mushrooms and cut each cap into 8 wedges. In a large skillet cook onions in 1 1/2 tablespoon oil over moderately low heat, stirring occasionally, until softened and golden, about 8 minutes. With a slotted spoon transfer onions to a bowl and cook carrots and celery in remaining tablespoon oil over moderate heat, stirring, until carrots are crisp-tender. Add mushrooms and cook, stirring, until liquid mushrooms give off is evaporated. Transfer vegetables to bowl and season with salt and pepper.
  • While beef is standing, skim fat from pan juices and reserve 4 tablespoons fat for Yorkshire puddings. (Puddings may be baked while beef is standing.) On top of stove add wine to roasting pan and simmer over moderately high heat, scrapping up brown bits, until reduced to about 1/2 cup. Add demiglace, jelly, horseradish, vegetables, parsley, and salt and pepper to taste and simmer, stirring occasionally, until heated through.
  • Discard string and with a sharp knife remove rib bones.
  • Thinly slice beef and serve over Yorkshire puddings with gravy.

3 large eggs
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter, melted and cooled slightly

1 1/2 teaspoons finely chopped fresh rosemary

  • Put a 12-cup muffin pan (preferably light-colored metal) in the oven and preheat to 400 degrees F.

  • Make batter:
  • In a blender blend batter ingredients until smooth and transfer to a bowl. Let batter stand, covered, 1 hour.
  • Preheat oven to 425°F.
  • Put 2 mini-muffin pans on 1 baking sheet and put remaining pan on another baking sheet. Spoon 1 teaspoon oil into each cup. Put first baking sheet in middle of oven 3 minutes to heat oil in cups. Working quickly, pour 2 teaspoons batter into hot oil in each cup and bake in middle of oven 18 minutes, or until pudding shells are golden and puffed. Remove shells from cups with tongs and cool on racks. Repeat procedure with other baking sheet. Shells may be made 3 days ahead and chilled, covered, or 1 month ahead and frozen in airtight containers. Bring shells to room temperature and recrisp in a 300°F. oven 10 minutes.
  • In a small bowl stir together sour cream, horseradish, and parsley and transfer to a small pastry bag fitted with 1/8-inch plain tip.
  • Fold a few beef slices into each shell and pipe 1 teaspoon horseradish cream onto each pudding. Garnish puddings with parsley.

Steps:

  • Whisk eggs and milk in large bowl until well combined, about 20 seconds. Whisk flour and salt in medium bowl and add to egg mixture; whisk quickly until flour is just incorporated and mixture is smooth, about 30 seconds. Cover batter with plastic wrap and let stand at room temperature for at least 1 hour or up to 3 hours. After removing roast from oven, whisk 1 tablespoon of beef fat into batter until bubbly and smooth, about 30 seconds. Transfer batter to 1-quart liquid measuring cup or other pitcher. Measure 1/2 teaspoon of remaining 2 tablespoons beef fat into each cup of standard muffin pan. When roast is out of oven, increase temperature to 450 degrees and place pan in oven to heat for 3 minutes (fat will smoke). Working quickly, remove pan from oven, close oven door, and divide batter evenly among 12 muffin cups, filling each about 2/3 full. Immediately return pan to oven. Bake, without opening oven door, for 20 minutes; reduce oven temperature to 350 degrees and bake until deep golden brown, about 10 minutes longer. Remove pan from oven and pierce each pudding with skewer to release steam and prevent collapse. Using hands or dinner knife, lift each pudding out of tin and serve immediately.

7/8 cup flour
1/2 teaspoon salt
1/2 cup milk, at room temperature
2 eggs
1/2 cup water, at room temperature
lard, to suit

Steps:

  • Flour and salt in a large bowl --.
  • Make a "well in the dry ingredients, and add the "warm" milk.
  • Stir thoroughly.
  • Beat the eggs separately and add to batter.
  • Add the warmed water.
  • Beat this with a beater until large bubbles rise to the surface -- then allow to "rest" for an hour --.
  • Beat again after resting --.
  • Melt lard to 1/4" depth (6mm) in each muffin holder at preheated 400 degree oven, then pour in batter in each cup to 5/8" (15 mm) depth (very quickly!) and cook at 400°F for 20 minutes --.
  • Lard will make them taste best, but butter or just about any other oil will also work, will beef fat, which is smokey but superb in flavour.
  • ENJOY!

70 g plain flour (all purpose)
2 eggs
100 ml milk
goose fat / duck fat or lard (shortening)

Steps:

  • 1. Pre-heat oven to 240C. Prepare a 12 hole muffin tin by placing about a teaspoon of goose fat into the bottom of each tin and then place in the oven for about 15 minutes.
  • 2. To make the batter. Place the flour in a bowl and beat in the eggs until smooth. Gradually add the milk and carry on beating until the mixture is lump free.
  • 3. Pour the batter into a jug. Remove the hot muffin tin from the oven. Carefully and evenly pour the batter into the muffin tins and place the tin back in the oven.
  • 4. Cook for 15 minutes until the puddings have puffed up and browned. Serve immediately.
  • 5. Once cooled any spares can be frozen for up to a month or you can have them for tea with warmed syrup poured over them.

Tips:

  • For the best results, use a hot oven and a popover pan or muffin tin. This will help the Yorkshire puddings rise quickly and evenly.
  • Don't overmix the batter. Overmixing will make the Yorkshire puddings tough.
  • Let the batter rest for at least 30 minutes before baking. This will allow the gluten in the flour to relax, which will also help the Yorkshire puddings rise.
  • Pour the batter into the hot oil in the muffin tins. Do not fill the muffin tins more than halfway full, as the Yorkshire puddings will rise.
