1 (40 ounce) can cut sweet potatoes, undrained
1 cup white sugar
2 eggs
⅓ cup butter
⅓ cup milk
1 teaspoon vanilla extract
1 cup packed brown sugar
1 cup chopped pecans
⅓ cup all-purpose flour
⅓ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2 quart baking dish.
  • Place the sweet potatoes and their liquid in a medium saucepan, and bring to a boil. Cook 15 minutes, or until tender. Remove from heat, drain, and mash.
  • In a medium bowl, mix the mashed sweet potatoes, white sugar, eggs, 1/3 cup butter, milk, and vanilla extract. Spread evenly into the prepared baking dish.
  • In a separate bowl, mix the brown sugar, chopped pecans, flour, and 1/3 cup melted butter. Sprinkle over the sweet potato mixture.
  • Bake 35 minutes in the preheated oven, or until a knife inserted near the center comes out clean.

2-1/4 to 2-1/2 pounds sweet potatoes, cooked, peeled and mashed (about 4 cups)
1/3 cup butter, melted
2 large eggs, lightly beaten
1/2 cup 2% milk
1 teaspoon vanilla extract
1/2 cup sugar
TOPPING:
1/2 cup chopped nuts
1/2 cup sweetened shredded coconut
1/2 cup packed brown sugar
3 tablespoons butter, melted

Steps:

  • In a large bowl, combine the mashed potatoes, butter, eggs, milk, vanilla extract and sugar. Spread into a greased 1-1/2-qt. casserole. , For topping, combine all the ingredients and sprinkle over potatoes. Bake at 375° for 25 minutes or until a thermometer reads 160°.

4 -5 cups peeled cooked and mashed yellow sweet potatoes
1/2 cup melted butter
1/3 cup milk
1/2 white sugar (*)
1/2 teaspoon vanilla
2 eggs, beaten
3/4 cup brown sugar (*)
1/2 cup flour
1/3 cup butter
1 cup chopped pecans

Steps:

  • *Bothsugar amounts can be lessened if you don't want it too sweet (like maybe 1/3 cup white sugar and 1/2 cup brown sugar).
  • Preheat oven to 350°.
  • Grease a 9x13 baking dish.
  • In a large bowl, mix together mashed sweet potatoes, 1/2 cup melted butter, milk, white sugar, vanilla, and eggs.

2 medium red potatoes, peeled and cubed
1 medium yellow summer squash, diced
3 tablespoons finely chopped onion
1 tablespoon butter
Dash salt and pepper
1/2 cup shredded sharp cheddar cheese
3 bacon strips, cooked and crumbled

Steps:

  • Place the potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Add squash; cover and simmer 5 minutes longer or until vegetables are tender. Drain. Place potatoes and squash in a bowl; mash., In a small skillet, saute onion in butter. Add to potato mixture. Season with salt and pepper. Transfer to a greased 2-cup baking dish (dish will be full). Top with cheese. Bake, uncovered, at 350° for 10 minutes or until cheese is melted. Sprinkle with bacon.

2 large sweet potatoes
1 butternut squash
1 cup orange juice
1 tablespoon unsalted margarine or 1 tablespoon unsalted butter
2 cinnamon sticks

Steps:

  • Preheat oven to 375° and cut the sweet potatoes in half.
  • Cut the butternut squash in half vertically and scrape out the seeds.
  • Put the vegetables, cut side up, in a baking pan and bake, uncovered, until they are very soft, at least 1 1/2 hours.
  • Scoop the potato and squash out of the skins, combine them, and mash until smooth.
  • Put the orange juice, margarine, and cinnamon sticks in a small saucepan and heat, reducing until it is about 1/4 cup syrup.
  • Discard cinnamon sticks and stir orange syrup into the mashed vegetables.
