3 cups sliced yellow summer squash
1/2 cup sliced onion
1/2 cup each julienned green and sweet red peppers
1 tablespoon canola oil
1/4 cup water
1-1/2 teaspoons minced garlic

3 medium yellow squash, sliced
3 medium zucchini, sliced
2 tablespoons butter
2 tablespoons olive oil
1/4 cup white wine
1 (12 ounce) jar roasted red peppers in vinegar, drained, julienned
salt & pepper (optional)
