CURRIED YELLOW SPLIT PEA SOUP WITH SPICED COCONUT

Provided by Carla Lalli Music

Categories     Bon Appétit     Dinner     Soup/Stew     Pea     Coconut     Seed     Healthy     Wheat/Gluten-Free     Vegetarian     Vegan

Yield Serves 4

Number Of Ingredients 18

Soup:
2 tablespoons coconut, olive, or vegetable oil
1 medium red onion, chopped
4 large carrots, scrubbed, chopped
Kosher salt
1 teaspoon fennel seeds
2 teaspoons Madras curry powder
1 teaspoon mustard seeds
12 ounces yellow split peas
6 cups chicken stock, low-sodium chicken broth, or water
Coconut and assembly:
1/2 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1/2 teaspoon mustard seeds
2 teaspoons coconut, olive, or vegetable oil
1/4 cup unsweetened coconut flakes
Kosher salt
Cilantro leaves (for serving)

Steps:

  • Soup:
  • Heat a large heavy pot over medium and pour in oil. Add onion and carrots, season with a five-finger pinch of salt, and cook, stirring often, until vegetables are very tender and just taking on a hint of color at the edges, about 5 minutes. Lightly crush fennel seeds with a mortar and pestle, or roughly chop them. Add fennel seeds, curry, and mustard seeds to pot and cook, stirring, until fragrant (the mustard seeds may begin to pop), less than a minute. Add split peas, stir to coat, then add stock and 4 cups water. Increase heat and bring to a boil, then simmer, stirring occasionally and adding more water if soup looks too thick, until split peas are very tender and some are starting to disintegrate, 50-55 minutes.
  • Mash soup with a potato masher until split peas are in small pieces and soup is textured but creamy (if you prefer a smoother soup, use an immersion blender directly in the pot). Taste and adjust seasoning with more salt.
  • Coconut and assembly:
  • While the soup is simmering, lightly crush coriander, fennel, and mustard seeds.
  • Heat oil in a small skillet over medium and cook coconut flakes and spices, stirring constantly, until spices are sizzling and coconut is golden brown, about 1 minute. Transfer to a plate, season with salt, and let cool (coconut will crisp as it cools).
  • Serve soup topped with spiced coconut and cilantro.

SWEDISH YELLOW PEA SOUP (EMERIL LAGASSE)

Swedish Yellow Pea Soup (Emeril Lagasse) image

Sounds good and economical too! Be careful not to salt the soup too soon; because ham hocks are so salty, the soup may not need any added salt. And of course, I would add some minced garlic as well. One reviewer from the other site suggested adding some mustard into the stock. (to taste?) Also, her Swedish grandmother mashed 2/3 of the peas only and a third left alone for some texture. YELLOW SPLIT PEA SOUP--VEGETARIAN/VEGAN

Yellow Split Pea Soup--Vegetarian/Vegan image

This is from a veg cookbook purchased on the checkout lane at the grocery store but I'm not sure which. It is a lovely soup, and it gets better over a day or so. The ingredient list appears lengthy, but it is largely due to the yummy combination of spices. The original recipe calls for a combination of any veggies as long as you reach 4 cups (or a 16 oz bag of frozen veggies). I list specific veggies here as they are the ones recommended in the recipe.

Provided by smellyvegetarian

Categories     Vegan

Time 1h

Yield 4 serving(s)

Number Of Ingredients 14

4 cups water
1/2 teaspoon salt
1 cup yellow split peas (dry)
1 cup green beans
1 cup cauliflower
1 cup broccoli
1 cup carrot
1 teaspoon curry powder
1 teaspoon cumin
1/4 teaspoon turmeric
1/4 teaspoon black pepper
1/4 teaspoon ginger
1/8 teaspoon cayenne pepper
1 tablespoon olive oil

Steps:

  • In a medium pan bring water and salt to a boil; add split peas and return to boiling. Reduce heat and simmer, covered, about 45 minutes or until tender. Do not drain.
  • Meanwhile, steam vegetables until crisp tender.
  • In a small skillet, cook curry powder, cumin, turmeric, ginger, and red pepper in hot oil for 1-2 minutes or until fragrant.
  • In a food processor or blender combine the undrained split peas and the spice mixture. Process until combined. If too thick, add water or warm broth. Transfer back to the medium saucepan and stir in the steamed vegetables. Heat through and serve.
  • FOR WHAT IT'S WORTH--I highly recommend just leaving the split peas in the pan, adding spices, and using an immersion blender! Much simpler, and fewer dishes to wash :).

1 smoked ham hock
2 thyme sprigs or 1/2 teaspoon dried thyme
1/2 pound celery root
4 carrots, quartered lengthwise and sliced thin

Steps:

  • In a large bowl soak peas overnight in enough cold water to cover by 2 inches and drain.
  • In a 7 1/2-quart heavy kettle combine leeks, water, peas, ham hock, and thyme and simmer mixture, uncovered, until peas are very tender, about 30 minutes.
  • In a blender puree 4 cups soup in batches and return to kettle.
  • Peel celery root and cut into 1/4-inch dice. Add celery root to soup and simmer, stirring occasionally, 20 minutes. Add carrots and simmer, stirring occasionally, until tender, about 15 minutes.
  • Remove meat from ham hock and discard skin and bones. Chop meat coarse and stir into soup with salt and pepper to taste. Soup may be made 3 days in advance. Cool soup uncovered and keep covered and chilled. Thin soup with water if too thick.

Tips:

  • Select the Right Peas: Choose dried yellow peas that are whole, uniform in size, and free from blemishes.
  • Soaking the Peas: Soaking the peas overnight or for at least 4 hours helps reduce cooking time and improves their texture.
  • Use Good Quality Broth: Opt for a flavorful broth, such as chicken or vegetable broth, to enhance the soup's taste.
  • Sauté the Vegetables: Sautéing the vegetables before adding them to the soup intensifies their flavor and adds depth to the soup.
  • Seasoning and Spices: Experiment with different seasonings and spices, such as thyme, bay leaves, or smoked paprika, to create a unique flavor profile.
  • Simmer for Rich Flavor: Simmer the soup for at least 1 hour to allow the flavors to develop and meld together.
  • Puree for a Creamy Texture: If desired, use an immersion blender or a regular blender to puree a portion of the soup for a creamier consistency.
  • Garnish for Presentation: Garnish the soup with fresh herbs, croutons, or a drizzle of olive oil before serving for an appealing presentation.
