Though it might sound a little weird this is a really good bread here. I made if off of another bread recipe on recipezaar called yeast free sugar free bread recipe. I skipped the salt and used 1/4 cup of pumpkin per batch and it turned out just great! If you want to add salt, you can add 1 tsp. of celtic sea salt but it is not necessary. To make a ricer bread, use rice milk or some other natural nut milk for the liquids.

3 cups whole wheat flour
4 teaspoons baking powder
1 1/2 cups water
1/4 cup pumpkin

  • Mix dry ingredients.

  • Mix liquids and add to dry. Stir until there is no more dry flour.

½ cup raisins
1 cup whole wheat flour
⅔ cup all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cloves
½ teaspoon ground nutmeg
1 cup pumpkin puree
1 cup white sugar
2 eggs
¼ cup canola oil
1 cup coarsely chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place raisins in a bowl and pour in boiling water to cover by 1 inch. Allow to sit until raisins are plump and rehydrated, 3 to 4 minutes. Drain raisins, and reserve 1/3 cup of the soaking water in a separate bowl.
  • Combine whole wheat flour, all-purpose flour, cinnamon, baking soda, baking powder, salt, cloves, and nutmeg in a large bowl. Combine pumpkin puree, sugar, eggs, reserved soaking water, and oil in another bowl; mix with a spoon or whisk until well combined. Stir pumpkin mixture into flour mixture until just moistened. Fold in walnuts and raisins. Pour batter into a 9x5-inch loaf pan.

Inspired by both the fall and my favorite Quest for Glory game that had garlic and avocado sandwiches made on pumpkin wheat bread, I wanted to make my own pumpkin wheat bread in my bread machine...that's an actual yeast bread made with pumpkin, not a quickbread or sweet type of tea loaf. Hence, the coriander for savory flavor instead of cinnamon or the other traditional pumpkin pie spices. Sage or thyme would make nice additions to this bread too that go with pumpkin. I use my own homemade bread flour that's AP flour and vital wheat gluten, and I always have lots of canned pumpkin on hand no matter what time of year it is! Prep time is the dough cycle, mine takes about 90 minutes.
