My husband's favorite (mother-in-law's recipe) for candied yams. It's more like a dessert than a vegetable. It is very easy to make, and very tasty.

2 medium apples - peeled, cored, and sliced
⅓ cup chopped pecans
½ cup brown sugar
½ teaspoon ground cinnamon
2 (15 ounce) cans cut yams, drained
¼ cup margarine
2 cups mini marshmallows

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Toss apple, pecans, brown sugar, and cinnamon together in a bowl. Alternate layers of coated apple and cut yams in an 11x7-inch pan. Dot with margarine and cover.

2 pounds yams (red-skinned sweet potatoes), peeled, cut into 1-inch pieces
1 8-ounce Granny Smith apple, peeled, cored, cut into 1-inch pieces
2 tablespoons (1/4 stick) butter
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice

Steps:

  • Preheat oven to 350°F. Boil yams in pot of boiling salted water until tender, about 20 minutes. Add apple; cook until tender, about 5 minutes. Drain well. Place yams and apples on large baking sheet. Bake until slightly dry, about 10 minutes. Blend yams and apple in processor until smooth. Add butter and spices; blend until butter melts. Season with salt and pepper. (Can be made 1 day ahead. Chill.) Transfer mixture to medium saucepan. Stir yams over medium-low heat until hot.

1 (30 ounce) can sweet potatoes, drained, save liquid, and cut into bite sized chunks
2 medium tart apples, peeled, cored and cut into thick slices (I usually use Granny Smith)
1/2 cup packed brown sugar
1/4 cup butter
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 tablespoon cornstarch

Steps:

  • In a 1 quart buttered (or use Pam) casserole, alternate layers of potatoes and apples.
  • In a medium saucepan, melt butter, stir in brown sugar and spices.
  • Add half of reserved sweet potato liquid and bring to a boil.
  • Dissolve cornstarch in remaining potato liquid and add to pan.
  • Lower heat and simmer while stirring until thickened.
  • Pour over layered potatoes and apples until top layer is almost covered.
  • Bake, covered, at 350°F for 1 hour.
  • You may uncover during the last 15-20 minutes of baking time if the sauce needs thickening.
  • This freezes well.
