My Ex loved curry so I played with this recipe until it suited our tastes. This has a wonderful curry flavor and is so good. I don't like recipes that say they are curry and u can hardly taste the curry in it. I hope u enjoy this recipe as much as I do. 3 Tbsp olive oil, light
1/4 c butter
1 large onion, chopped
4 medium apples, peeled, cored and chopped
1/4 c flour
2 - 4 Tbsp mild curry powder, less or more to ur taste
1 - 2 Tbsp red curry paste, less or more to ur taste
2 - 4 Tbsp brown sugar, less if apples r sweet, more if u like ur curry sweeter
1/2 tsp salt
1/2 tsp white pepper
1/2 tsp onion powder
1/2 tsp garlic powder
3 c chicken broth
1 1/2 c coconut milk, or evaporated milk if u wish
2 c apple juice
4 c cooked cubed chicken, boneless breast and thigh meat or just breast meat
8 c cooked rice or couscous, ur choice

Steps:

  • 1. Prepare and chop chicken, onions. & apples and set aside. Make rice or couscous while cooking curry.
  • 2. In large deep skillet, melt butter and olive oil together. Add onion and saute a few minutes. Add apple and saute a few more minutes until crisp/soft.
  • 3. Sprinkle flour over mixture and cook for 2 minutes to cook out flour taste. Add currys and all spices. Stir in chicken broth, coconut milk and apple juice. Stir and cook over medium heat until thick and bubbling, adding more liquid if needed. Stir in chicken and cook another 10 minutes. Add more curry to suit ur taste. Serve over rice or couscous. Enjoy!
  • 4. Note about the curry: Start with the lesser amount and add more at the end before the chicken if u desire a stronger curry taste, as I do.

Apple Fritters are a wonderful fall treat! In 1995 my brother and his wife invited me and my daughter to go on vacation with them and their young grandson. We went to several places in Tennessee. One of the places we visited, that I will never forget, is the Apple Barn in Sevierville, Tennessee. We ate at their Restaurant for breakfast, lunch and dinner. At each of these meals they served these wonderful Apple Fritters. I wanted the recipe and just so happened they had this recipe on a post card in one of the shops there. Now I have these wonderful little fritters anytime I want em. Hope you enjoy!

1 - egg, beaten
1 cup(s) milk
4 tablespoon(s) margarine
1/4 cup(s) sugar
1/2 teaspoon(s) salt
1 - orange, rind and juice (rind is to be grated)
1 cup(s) apples, chopped but not to fine
3 cup(s) cake flour
2 teaspoon(s) baking powder
1 teaspoon(s) vanilla extract
- oil for frying

Steps:

  • Preheat oil in skillet to 350 degrees.
  • Beat egg. In a mixing bowl, combine the milk, egg, sugar and melted margarine. Add the orange juice, grated rind, chopped apples (skins can be left on) and vanilla. Sift together the flour, salt, baking powder. Stir into milk mixture with a spoon until blended. Do no over mix.
  • Drop off end of tablespoon into hot oil. Fry to a golden brown. Turn so they brown evenly.
  • Allow fritters to cool.
  • NOTE: You can eat as is or sprinkle with confectioners' sugar, or cinnamon/sugar, or glaze. These are so yummy!!

You are bound to find fried pies in the south at fairs and festivals. My former mother in law use to make these. I loved to watch her make them. We love em nice and warm!

Number Of Ingredients 8

2 cup(s) all-purpose flour
1/2 cup(s) shortening
1 teaspoon(s) salt
1/2 cup(s) cold water
2 - apples, peeled and diced, i use granny smith
1/3 cup(s) sugar
1/2 teaspoon(s) cinnamon
1/2 cup(s) to 1 cup vegetable oil

Steps:

  • In a medium saucepan, add apples, sugar and cinnamon. Cook on low heat until apples are soft, then remove from heat and mash to create a thick applesauce. Set aside.
  • In a separate bowl, sift flour and salt. Cut in shortening. Add water and mix until dough sticks together and you can form a ball. Dump dough onto a well-floured surface and roll it out to about 1/8 of an inch thick. Cut out 4-inch circles with a large cookie or biscuit cutter.
  • On each round drop 1 large tablespoon of apple mixture. Using your finger, moisten edges of dough. Fold in half then press edges closed with a fork.
  • Heat oil in a large skillet over medium-high heat. Fry pies two to three minutes on each side, until golden. Drain on paper towels and, while still hot, sprinkle with powdered sugar, if desired.
  • Note: If you don't want to make a dough for these pies, use canned biscuits, skip step 2, roll out biscuits and follow steps 3 and 4. Note 2: If you don't want to deal with cooking apples, you can also use apple pie filling. Enjoy!

2 granny smith apples, peeled & quartered
1 stick butter, melted
1 c sugar
1 c orange juice, fresh or bottled
1 can(s) pillsbury crescent rolls, 8 count

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a medium saucepan, combine margarine, sugar and orange juice. Let simmer while you peel, core and quarter apples.
  • 3. Roll each quarter of apple in a section of crescent roll. Place in a baking dish and pour liquid over the rolls.

2 teaspoons ground cinnamon
3 cups all-purpose flour
1 cup white sugar
1 ½ cups milk
½ cup butter, softened
3 teaspoons baking powder
1 teaspoon salt
3 eggs
¼ cup packed brown sugar
¼ cup chopped walnuts
2 tablespoons butter, melted
¾ cup confectioners' sugar
1 tablespoon butter, melted
¾ teaspoon vanilla extract
2 ½ teaspoons hot water

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 pan.
  • Mix pie filling and cinnamon, set aside.
