Time 20m

Yield 6 wraps, 6 serving(s)

Number Of Ingredients 8

2 yams, shredded (about 2 cups, I prefer not peeling them.)
1 (15 ounce) can black beans, drained, rinsed
1 cup red onion, chopped
4 green onions, sliced
1/2 cup sunflower seeds, shelled
1/4 cup Italian dressing, lite
2 teaspoons honey
6 (10 inch) flour tortillas, warmed to soften

Steps:

  • In a skillet coated with nonstick cooking spray, saute the shredded yams over medium-high heat for 5 minutes or until crisp tender, then transfer to a bowl.
  • In the same skillet, sprayed again, saute the red onion for 5 minutes or until tender, then add the onion to the shredded yams, along with the black beans, green onions & sunflour seeds, mixing well.
  • In a small bowl, mix together the dressing & honey, before adding this to the yam mixture, tossing to coat.
  • Fill the tortillas & wrap them up.

Yield 3 servings

Number Of Ingredients 19

2 medium sweet potatoes, peeled and cubed
olive oil, to taste
½ teaspoon smoked paprika
½ teaspoon garlic powder
kosher salt, to taste
pepper, to taste
½ medium yellow onion, diced
1 jalapeño, seeded and diced
1 clove garlic, minced
1 teaspoon chili powder
½ teaspoon ground cumin
cayenne pepper, to taste
15 oz black beans, 1 can, drained and rinsed
¾ cup corn
3 large flour tortillas
lettuce, chopped, for serving
diced tomato, for serving
shredded vegan cheddar cheese, for serving
guacamole, for serving

Steps:

  • Preheat the oven to 400°F (200°C).
  • Add the sweet potatoes to a baking sheet with a drizzle of olive oil, the paprika, garlic powder, salt, and pepper. Toss until well coated.
  • Bake for 20 minutes, flipping halfway through, until the sweet potato is tender.
  • Heat a drizzle of olive oil in a large saucepan over medium heat. Once the oil begins to shimmer, add the onion and cook for 3-4 minutes, until semi-translucent. Add the jalapeño, garlic, chili powder, cumin, and cayenne pepper and cook for 2-3 minutes, until the spices are fragrant. Add the black beans and corn, season with salt and pepper, and cook until warmed through, 3-4 more minutes.
  • To assemble a burrito, add ⅓ of the bean and corn mixture, ⅓ of the roasted sweet potatoes, some lettuce, tomatoes, vegan cheese, and guacamole to the center of a tortilla. Fold in the sides and roll up, keeping the filling tucked in place. Repeat with the remaining ingredients. Cut in half and serve.
  • Enjoy!

Tips:

  • Choose the Right Yams: Select firm and plump yams with smooth skin and no blemishes. Avoid yams with sprouts or soft spots.
  • Perfect Cooking: For tender yams, boil them until they can be easily pierced with a fork. Overcooking can make them mushy.
  • Flavorful Beans: Rinse and sort black beans before cooking. Add a bay leaf or cumin seeds to the cooking water for extra flavor.
  • Crispy Veggies: Sauté the bell pepper and onion over medium-high heat until they start to soften but still retain a slight crunch.
  • Tasty Dressing: Whisk the dressing ingredients until well combined. Adjust seasonings to your preference.
  • Assembly: Spread the dressing on the wraps and top with the yam and black bean mixture, veggies, and cheese. Fold or roll the wraps tightly.
  • Serving Suggestions: Serve the wraps immediately or chill them for later. Accompany with additional dressing, sour cream, or guacamole.

Conclusion:

These Yam and Black Bean Wraps capture the vibrant flavors of Louisiana cuisine. The tender yams, zesty black beans, crisp veggies, and tangy dressing combine to create a satisfying and wholesome meal. Perfect for lunch, dinner, or even as a party appetizer, these wraps offer a unique blend of textures and flavors. Experiment with different fillings and toppings to create your own customized wrap variations. Enjoy the delicious fusion of savory and tangy flavors in every bite!
