SUNNY'S EASY ON YOUR BODY AND LEAN JALAPENO BURGER
Steps:
- For the grill: Preheat the grill to 400 degrees F or a cast-iron pan over medium-high heat.
- Crumble the beef into a large bowl. Add the salt, seasoning blend and some pepper. Mix the beef mixture gently with your hands so as to not overmix. Just fold the ground beef, don't mush or squeeze the ingredients into the beef. Form 4 patties.
- Place the patties and the jalapenos over the direct heat of the grill or into the cast-iron pan. Cook the patties on one side until the meat is seared and releases easily from the grill grates or pan, 3 to 4 minutes. Flip the patties and rotate the jalapenos to get them charred on both sides. Cook until desired doneness on the beef, 3 to 4 more minutes for medium-rare to medium.
- For the toppings: Top the burgers with the cheese and transfer to a plate or sheet pan. Cover with aluminum foil for about 5 minutes. Meanwhile, remove the charred jalapenos and chop. Spread over the cheese on the burgers.
- Squeeze mustard on both the top and bottom buns if desired. Build the burgers by topping the bottom buns with the cheeseburgers, jalapenos, a pile of red onions, a pile of lettuce and the top buns. Serve.

- Combine first 7 ingredients in a large bowl, and stir well.
- Divide mixture into 6 equal portion, shaping into patties.
- Combine 3 tablespoons jalapeno jelly, 3 tablespoons chili sauce, and 1/2 teaspoon smoke seasoning in a small bowl; stir well.
- Prepare grill.
- Brush 1 side of each hamburger patty with jelly mixture.
- Place patties, jelly side down, on grill rack coated with cooking spray; cover and grill 5 minutes.
- Brush patties with remaining jelly mixture. Turn patties over; cover and grill an additional 5 minute or until done.
- Combine remaining 2 tablespoons jelly and remaining 2 tablespoons chili sauce; stir well and spread evenly over bottom halves of buns.

- 1. Seed and finely chop your jalapeno pepper.
- 2. Add ground beef and the chopped jalapeno to a bowl.
- 3. Chop the chipotle pepper. Add that plus the adobo sauce to the ground beef and jalapenos.
- 4. Add the liquid smoke, Worcestershire sauce, onion powder, and mayo to another bowl. Whisk together.
- 5. Combine all ingredients into the bowl with the ground beef and thoroughly mix with your hands.
- 6. Divide the ground beef into four sections and make your patties.
- 7. Cook the burgers however you see fit. I grilled them and finished them off in the oven to help melt the cheese. You do what you see fit. Cooking them in a cast iron skillet would be remarkable.
- 8. Don't forget to cook your bacon! Fry in a skillet. Or, I put mine in the oven at 375 for 12 to 15 minutes depending on your oven the cooking time may vary.
- 9. Once your burgers are cooked, assemble them the way you see fit.
