Steps:

1 cup onion, chopped
6 medium baking potatoes, peeled and cut into 1/8 inch slices (about 2 1/2 pounds)
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup extra-sharp cheddar cheese, shredded
1/4 cup fresh romano cheese, grated
1 3/4 cups low sodium chicken broth
1 cup evaporated skim milk

Steps:

  • Preheat over to 425 degrees.
