Time 1h5m

Yield 8

Number Of Ingredients 11

8 chicken thighs (about 3 pounds, bone-in)
3/4 teaspoon salt
1/4 teaspoon black pepper (freshly ground)
5 tablespoons butter (melted)
3 tablespoons mustard (spicy or grainy)
2 teaspoons maple syrup (or honey)
1/4 teaspoon garlic powder
1 1/4 cups panko breadcrumbs
1/3 cup Parmesan cheese (shredded, or about 1/4 cup grated)
1/4 to 1/2 teaspoon paprika (to taste)
2 teaspoons parsley flakes (dried)

Steps:

  • Gather the ingredients.
  • Heat the oven to 375 F. Set a rack on a large foil-lined baking sheet.
  • Pat the chicken thighs with paper towels to dry them. Trim any excess fat or skin. The skin adds juiciness and flavor, but feel free to remove it if desired.
  • Sprinkle the chicken pieces with 3/4 teaspoon salt and 1/4 teaspoon pepper.
  • In a small bowl, combine the melted butter with the mustard, maple syrup or honey, and garlic powder.
  • In another shallow bowl, combine the panko crumbs with shredded or grated Parmesan cheese, paprika, 1 teaspoon salt, 1 teaspoon pepper, and parsley.
  • Brush or rub the chicken thighs all over with the butter and mustard mixture and then press all sides in the panko mixture to coat thoroughly.
  • Place the coated chicken thighs on the rack over the prepared baking sheet.
  • Bake for 40 to 45 minutes or until the chicken reaches 165 F. The juices should run clear when the chicken is pierced with a fork.

Categories     Chicken

Time 50m

Number Of Ingredients 5

4 4-( 4-5 oz) skinless, boneless chicken breasts, or i have even used chicken tenderloins
1 c panko bread crumbs
1/4 c parmesan cheese
1 Tbsp cajun seasoning
1 tsp onion powder, or any favorite spice to your liking

Steps:

  • 1. preheat oven to 350..
  • 2. I use a large freezer bag, mix all ingredients in bag...if chicken is thick, pound it out with a meat mallet, so all are about the same thickness.
  • 3. Make sure the chicken is moist..if you have to run it under the tap..I pour the crumbs onto a plate, then press the breasts one at a time on both sides, as so the crumbs stick, as there is no dipping in milk or egg..
  • 4. spray a baking rack with cooking spray, and lay the breasts side by side..there is no need to turn the chicken if using a rack, it will brown well, and evenly on both sides..
  • 5. I set the rack on a cookie sheet, bake for 30-40 min..depends I guess on the oven..they will be nice and crunchy on the outside, yet moist inside..but, the best part for me is low fat, but tastes like fried..enjoy

Tips:

  • Use a meat mallet to pound the chicken breasts to an even thickness. This will help them cook evenly and prevent them from drying out.
  • Don't overcrowd the pan when cooking the chicken. If the chicken is too crowded, it will not cook evenly and will be more likely to stick to the pan.
  • Be careful not to overcook the chicken. Chicken is cooked through when it reaches an internal temperature of 165 degrees Fahrenheit. Overcooked chicken will be dry and tough.
  • Serve the chicken immediately with your favorite dipping sauce. Some popular dipping sauces for chicken include ranch dressing, honey mustard, and barbecue sauce.

Conclusion:

Parmesan panko oven-fried chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is made with simple ingredients that you probably already have on hand, and it cooks in just 30 minutes. This chicken is crispy on the outside and juicy on the inside, and it is sure to be a hit with your family and friends.
