From the Weight Watchers cookbook called "Cook it Quick" Make sure to pat the scallops dry before you mix them with the flour and salt. That way they won't soak up too much flour. You can substitute smaller Scallops just make sure you adjust the cooking time. You don't want to overcook them or they will become tough and rubbery. I like to serve this with recipe #272832.

WEIGHT WATCHERS BAKED SHRIMP IN LEMON GARLIC SAUCE-4 POINTS

Weight Watchers Baked Shrimp in Lemon Garlic Sauce-4 Points image

Found this on the Weight Watchers site in 2007 when I was looking for something special and easy to make. Could not believe this only had 4 points per serving. This is really a no fuss dish and comes together in minutes--easy to put together after work.

Time 16m

Yield 4 serving(s)

Number Of Ingredients 8

1 1/4 lbs shrimp, peeled and deveined, 16-20 count size
vegetable oil cooking spray
1/4 cup fresh lemon juice
2 tablespoons melted butter
1 teaspoon Worcestershire sauce
3/4 teaspoon lemon pepper
1/4 teaspoon ground red pepper
2 tablespoons parsley, chopped

Steps:

  • Preheat oven to 425 degrees.
  • Arrange shrimp in single layer in a 13 x 9 baking dish coated with cooking spray.
  • Combine lemon juice and next 5 ingredients; pour over shrimp.
  • Bake at 425 degrees or 8 to 10 minutes or until shrimp are done.
  • Sprinkle parsley over shrimp, serve immediately.

Tips:

  • Choose the right scallops. Look for large, dry scallops that are firm and plump. Avoid scallops that are slimy or have a strong odor.
  • Cook the scallops properly. Scallops are best cooked quickly over high heat. This will help to prevent them from becoming tough and rubbery.
  • Use fresh, flavorful ingredients. The quality of your ingredients will make a big difference in the final dish. Use fresh herbs, garlic, and lemon to brighten up the flavors.
  • Don't overcrowd the pan. When cooking scallops, it's important to not overcrowd the pan. This will prevent them from cooking evenly.
  • Serve the scallops immediately. Scallops are best served immediately after they are cooked. This will help to ensure that they are juicy and tender.

Conclusion:

These garlicky lemon scallops are a delicious and easy-to-make meal that is perfect for any occasion. They are packed with flavor and can be cooked in just a few minutes. Serve them over rice, pasta, or your favorite roasted vegetables for a complete meal. With just 4 Weight Watchers points per serving, they are a great way to enjoy a healthy and satisfying meal.
