A flavorful main-dish salad. In some places, cervelas sausage is called cervelat. The Swiss butcher at my local German deli tells me that what is called Knackwurst is actually Swiss Cervelat. Although the original recipe says not to cook or grill the sausage but rather use it "raw", I would make sure the sausage is pre-cooked or smoked and not actually raw. (Raw pork, eeww) Also, you can use only emmenthaler (swiss) cheese and gruyere if tilsiter is unavailable, just adjust amounts. I don't know why the food.com memory banks call it "knackwurst of frankfurter" but do NOT use hot dogs!!

1 bunch red radish, cut into slices
2 carrots, cut into slices
1/4 lb emmenthaler cheese, cut into small pieces
1/4 lb gruyere cheese, cut into small pieces
1/4 lb tilsiter cheese, cut into small pieces
3 knackwurst of frankfurters, cut into slices (Swiss pork sausage -see description)
1/2 cucumber, cut into small pieces
4 potatoes, boiled, cut into small pieces
1/4 teaspoon pepper
1 tablespoon mustard
1 onion, chopped
1 garlic clove, pressed
1/4 teaspoon salt
1 teaspoon lemon juice
4 tablespoons vinegar
5 tablespoons oil
1 -2 egg, cooked hard
2 tomatoes
1 teaspoon chives, minced

Steps:

  • Put the vegetables and the cheese in a bowl and mix them well.
  • Make the sauce with all the ingredients mentioned above, from pepper to oil and stir well.
  • Pour the sauce over the salad and mix well.
  • Peel the eggs and cut them into slices.
  • Cut the tomatoes and use them together with the eggs for decoration.
  • Sprinkle the chives over the salad.

I had never had wurstsalat until I sampled some at Disney's Epcot's Biergarten in the German pavillion. One bite and I was head-over-heels! I came home and scoured the net collecting every recipe available because theme park admission is just too darn expensive to shell out every time a craving hits. This is the culmination of my efforts. If you want to stretch it out a little bit, toss 2 cups of sliced cooked potatoes in with the mix.

3 tablespoons red wine vinegar
1 tablespoon German mustard or 1 tablespoon Dijon mustard
3 tablespoons cold beef stock
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon cracked black pepper
1 lb bratwursts or 1 lb knockwurst, precooked and thinly sliced into disks
1/2 cup sweet onion, thinly sliced
3 hard-boiled eggs, thinly sliced into disks
1 cup sour dill pickle, thinly sliced into disks

4 oz emmalander cheese, cubed
4 oz greyerzer cheese, cubed
4 oz tilister cheese, cubed
Pepper to taste
1 onion, chopped
1 clove garlic, minced
1/4 tsp salt
1 tsp lemon juice
4 Tbsp vinegar
5 Tbsp oil
1-2 hard boiled eggs, sliced
2 tomatoes, sliced
chives, chopped

Steps:

  • 1. Mix vegetables, meat, cheeses in a bowl.
  • 2. Mix dressing (pepper to oil), add to veggies..
  • 3. Decorate with egg and tomato slices, and chives.

(as the name implies is comes in the shape similar to a whole kilbassa but it's not smoked.boars head makes a good one)
6 oz. jarlsberg cheese in one piece
2 hard boiled eggs
2 dill pickles
dressing:
1/2 c. light mayonaise
1/2 c. sour cream
1 T dijon mustard
1//4 cupped snipped chives
1/2 small onion minced
two dashes hot sauce
salt and pepper to taste

  • 1. cut bologna, cheese and pickles into small cubes,they should all be the same size. roughly chop eggs. 2.whisk all dressing ingredients together and let sit in frig at least half an hour. 3. fold the chopped ingredients into the dressing and serve on good quality soft rolls.
