1/4 cup fresh lemon juice
1/2 cup olive oil
1 tablespoon capers
1 tablespoon finely chopped parsley
Freshly ground black pepper
12 medium asparagus spears, tough end removed
2 tablespoons extra virgin olive oil
Salt and freshly ground pepper
12 thin slices prosciutto
12 thinly shaved pieces of Pecorino Romano cheese

Steps:

  • Whisk together the lemon juice and olive oil in a small bowl. Add the capers and parsley and season with black pepper. Preheat grill. Grill the asparagus, braised with olive oil. Toss the asparagus with the olive oil and season with salt and pepper to taste. Wrap a piece of prosciutto around each spear and place on a platter. Drizzle with lemoncaper vinaigrette and top with the cheese.

1 small puff pastry sheet, 1 3x4-inch piece (buttered)
1 baby asparagus, freshly steamed al dente
1 teaspoon gorgonzola (blue cheese substituted if necessary)
salt and pepper

Steps:

  • Take 3 sheets and butter the first then lay the 2nd on top, then butter the 2nd sheet, and then lay the 3rd sheet on top Now slice the sheet in 2 1/2 inch strips, cut each strip 4 inches. Each strip should be 4 inches long by 2 1/2 inches wide.
  • Take the asparagus that has been trimmed and steamed, al dente, and place on the cut puff pastry, now brush with a little melted butter and then put a teaspoon full of cheese on it.
  • Now wrap the pastry over the asparagus as in a roll. It's ok if the tip and end sticks out; seal the pastry with melted butter and put in a plastic container till ready to use and freeze.
  • When ready to use, put on a greased cookie sheet and put in the oven on the middle rack or in a toaster oven. Bake in the oven on high heat till the pastry turns golden color and the cheese starts to ooze out the ends. Don't over bake or they will burn.
  • Note: The reason I have put the ingredients at one each is so you can make as little or as much as you want, just follow the amount for each item how many you want to make.

We were inspired by a similar dish we've had at an Italian restaurant, but used it as a side dish instead of an antipasti plate, and substituted the prosciutto with bacon. The cheese, a relatively mild cow's milk cheese, should be relatively easy to find because of its increasing popularity. Super easy to make, and super tasty!

1 tablespoon olive oil
1 clove garlic, thinly sliced
12 spears fresh asparagus, trimmed
1 cup grape tomatoes, halved
1 teaspoon lemon juice
4 slices hardwood smoked bacon
¾ pound Taleggio cheese, cut into 1/4-inch pieces

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a large skillet over medium heat. Cook and stir garlic until fragrant, about 2 minutes.

1 3/4 lbs sirloin tip steaks
4 ounces goat cheese
1 lb beef bacon
12 ounces asparagus spears, fresh

Steps:

  • Tenderize steaks with a meat tenderizer. Rub steaks with your favorite steak seasoning (I like to use a greek seasoning blend). Lay out flat on cookie sheet and drizzle heavily with balsamic vinegar. Cover and marinate for 30 minutes.
  • Trim asparagus to 4-5 inches in length. Divide steaks into 3 oz pieces, large enough to hold approx 3 asparagus spears each. Divide goat cheese into 1/2 ounce servings.
  • Place 3-4 trimmed asparagus spears and 1/2 oz of goat cheese in center of each steak. Roll steak to seal in asparagus and cheese. Wrap each beef roll with 1-2 slices of uncooked beef bacon. Place toothpick through seam to help hold bacon on while cooking. Place wrap, seam side down, on broiler pan. Bake in oven on 350F for 30 - 35 minutes.

16 fresh asparagus, peeled and boiled al dente
16 slices parma ham, thinly sliced (or Serrano ham)
4 ounces blue cheese
1 small onion, finely diced
1/2 cup sherry wine
1 tablespoon creme fraiche
2 romaine lettuce hearts (to garnish)
salt and pepper

Steps:

  • Heat a pan to medium high heat.
  • Wrap each asparagus with one piece of ham.
  • Add a bit of oil to the pan and fry each asparagus until the ham is golden brown.
  • You may have to do two batches, keep the first batch warm in the oven.
  • Put the second batch in the oven and throw in the onions over medium high heat and cook them a couple minutes until golden.
  • Deglaze the lot with about 1/4 - 1/2 cup good dry sherry scraping up all the goodness on the bottom then let it reduce.
  • Add the cream, until very warm, then throw in the cheese until just melted.
  • Salt and pepper it to taste and serve immediately drizzled over the asparagus and lettuce.

20 fresh asparagus spears
10 slices cheese (flexible type like Havarti or Muenster)

Steps:

  • Break off tough asparagus ends; steam for approximately 3 or 4 minutes, just until tender crisp.
  • Lay cheese slices flat, lay asparagus along side edge of cheese, with top of asparagus sticking out a bit. Carefully roll, I found Muenster cheese is easiest to roll, if you heat the havarti for about 10 seconds in a microwave, it rolls without breaking. If necessary use tooth picks or just lay on plate with opening down. We love the flavour of the Muenster with the asparagus and used both cheese with jalapeno. Lots of flavour! They can be cut in half, put the asparagus tops on opposite ends.
