8 ounces uncooked bucatini pasta or thick spaghetti
1/2 cup hoisin sauce
1/3 cup rice vinegar
3 tablespoons orange juice concentrate
3 tablespoons soy sauce
1 tablespoon sesame oil
4 ounces fresh snow peas
1/2 cup julienned carrot
1 small onion, cut into thin wedges
1 tablespoon canola oil
1 garlic clove, minced

Steps:

  • Break bucatini into thirds; cook according to package directions. , Meanwhile, in a large bowl, whisk the hoisin sauce, vinegar, orange juice concentrate, soy sauce and sesame oil. Drain pasta. Add to hoisin sauce mixture; toss to coat. Set aside., In a large skillet, saute the snow peas, carrot and onion in canola oil for 2 minutes. Add garlic; saute 1 minute. Add to pasta mixture; toss to coat. Serve warm or chilled. Refrigerate leftovers.

½ cup walnut halves
¼ cup sugar
3 cups mixed greens
½ cup dried cranberries
½ cup crumbled Gorgonzola cheese
1 tablespoon raspberry vinaigrette
1 tablespoon white vinegar
1 tablespoon olive oil

Steps:

  • Place walnuts and sugar in a skillet over medium heat, stirring constantly until the sugar dissolves into a light brown liquid and coats the walnuts. Remove walnuts from skillet, and spread them out on a sheet of aluminum foil to cool.

1 (6 ounce) package raspberry gelatin powder or 1 (6 ounce) package grape gelatin
3 (1/4 ounce) envelopes unflavored gelatin
3 cups boiling water
100 flexible plastic straws
1 tall slender 4 cup container (same height as extended straws)
3/4 cup whipping cream
12 -15 drops green food coloring

Steps:

  • In a bowl, combine gelatins.
  • Add boiling water; stir until gelatins completely dissolve. Chill until lukewarm, about 20 minutes.
  • Meanwhile, gently pull straws to extend to full length; place in tall container.
  • Blend cream and food coloring with the lukewarm gelatin mixture. Pour into container, filling straws.
  • Chill until gelatin is firm, at least 8 hours, or cover and chill up to 2 days.
  • Pull straws from container (if using a carton, tear carton away from straws). Pull straws apart; run hot tap water for about 2 seconds over 3 to 4 straws at a time. Starting at the empty ends, push worms from straws with rolling pin, or use your fingers; lay worms on waxed paper-lined baking sheets.
  • Cover and chill until ready to use, at least 1 hour or up to 2 days.
  • Worms will hold at room temperature up to 2 hours.

6 apples (we used Braeburn)
juice 0.5 lemon
100g white chocolate
50g puffed rice
jelly worm sweets (optional)

Steps:

  • Core the apples, starting at the base and trying to keep the stalk ends intact. Use a blunt table knife or melon baller to scoop out any remaining bits of seeds and core if you need to. You can also use a metal skewer to make 1 or 2 holes in the sides. Brush the cut parts of the apples with lemon juice and put on a plate or board.
  • Put the chocolate in a heatproof bowl over a pan of simmering water to melt. Once melted, stir in the puffed rice, then remove from the heat. Using a teaspoon, pack the chocolate and puffed rice mixture into the apples, sticking a few into the smaller holes and on the top to look like they're crawling out. Transfer the apples to the fridge for around 20 mins to set.
  • Spoon any remaining mixture into a mini muffin tin lined with paper petit four cases and put in the fridge to set along with the apples.
