2 cups cooked and mashed sweet potatoes
1 teaspoon vanilla extract
4 eggs
3 cups all-purpose flour

1 (8 ounce) package Neufchatel cheese, softened
1 ½ cups brown sugar
1 ½ cups sugar

1 teaspoon baking soda
1 teaspoon ground cinnamon

1 cup (2 sticks) unsalted butter, room temperature
1 1/2 cups packed light brown sugar
1 cup mashed sweet potato
6 large eggs, room temperature
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup whole buttermilk
chopped pecans, for garnish- optional
vanilla ice cream, for serving- optional
1 1/2 cups powdered sugar
1/2 cup (1 stick) salted butter
3 tablespoons whole milk (or milk of choice)
1/2 teaspoon vanilla bean paste or 1 teaspoon vanilla extract
