Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 6

8 large eggs, hard boiled
4 tablespoons mayonnaise (more, or less, to taste)
1/2 teaspoon salt (or more to taste)
1/2 cup finely chopped onion, more if you love onions (optional)
1 1/2 tablespoons canola oil
4 slices freshly made crisp bacon, crumbled (optional)

Steps:

  • Mash the hard-boiled eggs. Don't mash them too fine.
  • If using onions, heat the oil in a skillet and add the onions. Sautee until they turn golden brown.
  • Add the onions or bacon (or for the ultimate version, both!), mayonnaise, and salt to the chopped eggs and mix thoroughly.
  • Taste and adjust the level of salt. If you like a creamier texture, add a little more mayonnaise.
  • Serve in a bowl if using as a brunch spread. If serving as a lunch salad, surround a generous scoop with lettuce, tomato wedges, and sliced cucumbers.
  • Enjoy!

While we love a jazzed up version of egg salad, we always come back to this one for its simplicity, clean flavors and sheer nostalgia. This is the best version of a classic egg salad. Time 35m

Yield 2 cups

Number Of Ingredients 8

6 large eggs
1/3 cup mayonnaise
1 stalk celery, finely chopped
1/2 small onion, finely chopped
1 tablespoon chopped fresh parsley or dill
2 teaspoons Dijon mustard
1 tablespoon lemon juice
Kosher salt and freshly ground black pepper

Steps:

  • Cover the eggs with at least 2 inches of water in a medium saucepan and bring to a rolling boil. Remove from the heat, cover and let sit for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely.
  • Mix together the mayonnaise, celery, onions, parsley, mustard, lemon juice, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl. Peel and roughly chop the eggs, add to the mayonnaise mixture and toss gently to combine. Serve right away, or cover and refrigerate for up to 2 days.

Tips:

  • Use hard-boiled eggs that are fresh. Older eggs will have a less flavorful yolk and may be more difficult to peel.
  • Peel the eggs under cold water. This will help to prevent the shells from sticking to the eggs.
  • Chop the eggs finely. This will help to ensure that the egg salad is smooth and creamy.
  • Use mayonnaise that is full-fat. Low-fat mayonnaise will make the egg salad dry and less flavorful.
  • Add some chopped vegetables for flavor and texture. Good options include celery, onion, and pickles.
  • Season the egg salad to taste. Salt, pepper, and paprika are all good options.
  • Chill the egg salad for at least 30 minutes before serving. This will help to allow the flavors to meld.

Conclusion:

Egg salad is a classic dish that can be enjoyed in many different ways. With its simple ingredients and endless variations, egg salad is a versatile dish that is perfect for any occasion. Whether you are looking for a quick and easy lunch or a hearty and satisfying dinner, egg salad is a great option. So next time you are looking for a delicious and nutritious meal, give egg salad a try!
