When I was a kid, one of my all-time favorite treats was magic cookie bars. This recipe combines all the same classic flavors in a magic brownie bar! —Mandy Rivers, Lexington, South Carolina

1 package (17-1/2 ounces) brownie mix
1 package (11 ounces) butterscotch chips
2 cups sweetened shredded coconut
1 cup chopped pecans, optional
1 can (14 ounces) sweetened condensed milk

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; grease foil. , Prepare brownie mix batter according to package directions. Transfer to prepared pan. Top with butterscotch chips, coconut and, if desired, pecans. Drizzle with milk. Bake until topping is light golden, 35-40 minutes., Cool completely in pan on a wire rack. Lifting with foil, remove brownies from pan. Cut into bars. Store in an airtight container.

I tweaked the recipe just a bit and my kids told me it was the best brownie bars they'd had - hence the name change. I've seen similar recipes to this called gooey cake. We think of it...

BOTTOM LAYER
1 box chocolate cake mix
1 large egg
1 stick butter or margarine, melted
TOP LAYER
3 large eggs
1 lb (4 cups) powdered suger
8 oz (1 block) cream cheese (reg or lowfat)
1 tsp vanilla extract or chocolate liqueur

Steps:

  • 1. Preheat oven to 325ºF. Spray 9x13 pan*** with Pam.
  • 2. Mix bottom layer ingredients in large mixing bowl, and press evenly into pan.
  • 3. Mix top layer ingredients till smooth and pour over bottom layer, tilting pan to cover completely.****
  • 4. Bake for 55 minutes or until golden brown. Let cool COMPLETELY. Cut into bars.
  • 5. Goes great with an ice cold glass of milk.
  • 6. NOTES: *** I've cooked this in glass pans, single layer aluminum pans and in Air Bake insulated pans. The Air Bake produces the best texture and color. **** No need to change/clean mixing bowl... use same tools as bottom layer. ***** The brownies rise pretty high then drop to about 1/2 the height of the pan. ****** Variations: Change the flavor of the cake mix and/or the extract/liqueur to suite your tastes. I've tried Strawberry Cake Mix...you really need a huge sweet tooth for this one. I couldn't handle this one; luckily I have a friend who could. I've also made it with Spice Cake - delicious!!!! Put the kids in the mood for pumpkin pie.

3 cups semi-sweet chocolate chips
1 cup butter
1 cup sugar
1 tablespoon instant coffee
4 eggs, beaten
1 tablespoon vanilla extract
1 cup flour
1/2 teaspoon baking soda
1 teaspoon salt

Steps:

  • Melt two cups of the chocolate chips in a large saucepan with the butter and coffee.
  • Take off heat and stir in sugar, let cool.
  • Beat in eggs and vanilla.
  • Stir in dry ingredients.
  • Stir in remaining chocolate chips.
  • Spread batter in greased 13 x 9 pan and bake in 350° F oven for about 20 minutes or until toothpick inserted comes out with few moist crumbs attatched.

2 cups white sugar
1 cup vegetable oil
4 eggs
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup cocoa
2 teaspoons vanilla
1 cup nuts (I like pecans) (optional)

Steps:

  • Beat together sugar, eggs, and oil.
  • Sift flour, baking powder, salt, and cocoa together.
  • Add to sugar-egg mixture.
  • Add vanilla and nuts (if desired).
  • Pour into two cake pans (8x8x2) lined with foil.
