Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bake potatoes in preheated oven for 1 hour.
- Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.

Steps:
- Heat oven to 350°F and position racks in top and bottom thirds.
- Wash potato (or potatoes) thoroughly with a stiff brush and cold running water.
- Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking.
- Place in a bowl and coat lightly with oil.
- Sprinkle with kosher salt and place potato directly on rack in middle of oven.
- Place a baking sheet (I put a piece of aluminum foil) on the lower rack to catch any drippings.
- Bake 1 hour or until skin feels crisp but flesh beneath feels soft.
- Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another.
- It will pop right open.
- But watch out, there will be some steam.
- NOTE: If you're cooking more than 4 potatoes, you'll need to extend the cooking time by up to 15 minutes.

Tips:
- Choose the right potato: Russet potatoes are the best choice for baked potatoes because they have a fluffy texture and a thin skin that crisps up nicely in the oven.
- Scrub the potatoes thoroughly: This will help to remove any dirt or debris from the skin.
- Prick the potatoes with a fork: This will help the steam to escape and prevent the potatoes from bursting.
- Rub the potatoes with oil: This will help to crisp up the skin and make the potatoes more flavorful.
- Season the potatoes with salt and pepper: You can also add other seasonings, such as garlic powder, onion powder, or paprika.
- Bake the potatoes at a high temperature: This will help to create a crispy skin and a fluffy interior.
- Check the potatoes for doneness: Insert a fork into the center of a potato. If it goes in easily, the potato is done.
- Let the potatoes cool slightly before serving: This will help to prevent the potatoes from falling apart.
Conclusion:
Baked potatoes are a simple but delicious dish that can be enjoyed in many different ways. With the right tips and techniques, you can create the perfect baked potato every time. So next time you're looking for a quick and easy meal, give baked potatoes a try. You won't be disappointed!
