Very moist chicken. Serve with a cheesy side if desired. Being from the South, I serve this with garlic cheese grits! (Note: For a slight variation in taste, you can use lemon flavored oil.)

4 bone-in chicken breast halves, with skin
1 tablespoon olive oil
1 pinch garlic powder
salt and pepper to taste
¾ cup Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rub each chicken breast with olive oil, then place in a lightly greased 9x13 inch baking dish. Season with garlic powder, salt and pepper to taste. Pour Worcestershire sauce over each breast. Cover dish with aluminum foil and bake in the preheated oven for 45 minutes. Check chicken and remove cover if desired. Bake for another 15 minutes.

This recipe came from Gourmet (April 1995). The original recipe called for chicken breasts with skin, but I always use skinless. It's quick and easy, and I always have everything to make it in the house. It's great served over rice.

2 boneless skinless chicken breasts (about 3/4 lb total)
2 teaspoons olive oil
1 garlic clove, minced
2 tablespoons Worcestershire sauce
1 tablespoon balsamic vinegar
1/2 cup low sodium chicken broth
1/2 teaspoon dried oregano, crumbled
1/4 teaspoon fresh lemon juice

Steps:

  • Pat chicken dry and place between 2 sheets of plastic wrap.
  • With a meat pounder, flatten chicken lightly to about 1/2 in thickness and season with salt and pepper.
  • In large non-stick skillet heat oil over moderate heat and cook chicken until lightly browned, approximately 6 minutes on each side.
  • Add remaining ingredients except lemon juice, and simmer until chicken is cooked through,about 4 minutes.
  • Transfer chicken with tongs to a platter.
  • Simmer sauce until reduced to about 1/4 cup.
  • Add lemon juice and salt and pepper to taste.
  • Pour sauce over chicken.

3 boneless, skinless chicken breasts
3 tbsp. Shedd's Spread Country Crock Regular (Soft)
Lea & Perrins Worcestershire Sauce
McCormick Garlic & Herb Seasoning (Salt Free)

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • Wash chicken breasts thoroughly in cold water. Place in a foil-lined (shiny side up) baking pan just large enough to hold the chicken.
  • Drop 1 tbsp. of margarine onto the center of each chicken breast. Pour enough Worcestershire sauce into the pan so that it reaches about the middle of each chicken breast. *** Sprinkle Garlic & Herb Seasoning liberally over the chicken.
  • Cover loosely with foil (shiny side down) and place in the oven. Overall cooking time, depending on your oven and the size of the chicken breasts, will be 1 1/2 - 2 hours.
  • Every 30 minutes, turn the chicken breasts over and spoon some of the liquid on top of each.
  • Cook uncovered for about the last 30 minutes or so. Make sure it remains moist throughout cooking time. When it is done, it will be tender, yet brown (from the sauce).
  • *** Because the Worcestershire is used for cooking and is not all consumed with the chicken, I put 1/2 cup as the amount in the ingredients (for nutrition information).
