Steps:
- Heat vegetable oil in a medium skillet to 325 degrees F. In a small bowl, whisk together egg and 1 tablespoon water. Working one at a time, brush wonton wrapper with egg wash; place string cheese in the center of each wrapper. Bring the bottom edge of the wrap tightly over the cheese, rolling from bottom to top until the top of the sheet is reached, being careful not to tear the wrapper. Repeat with remaining wrappers and string cheese. Add string cheese to the skillet and cook until golden brown and crispy, about 1-2 minutes. Transfer to a paper towel-lined plate. Serve immediately with marinara sauce, if desired.
MOZZARELLA STICKS
I'm particularly fond of these tasty mozzarella sticks because they're baked, not fried. Cheese is one of my family's favorite foods. Being of Italian descent, I cook often with ricotta and mozzarella cheeses. -Mary Merchant, Barre, Vermont

Steps:
- Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days.
- Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with the Marinara Sauce.
- In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)
Tips:
- Ensure Precise Wonton Cutting: Before starting, cut the wonton wrappers into uniform squares. This will ensure even cooking and attractive presentation.
- Proper Cheese Preparation: Cut the mozzarella sticks into even-sized strips. If using string cheese, cut them into four equal parts.
- Layering Perfection: Place one strip of cheese onto a wonton wrapper, and top it with a second wonton wrapper. The cheese should be completely enclosed within the wonton wrappers.
- Sealing the Wrappers: Use a small amount of water on the edges of the wonton wrappers to help seal them securely. This prevents the cheese from leaking out during frying.
- Double Frying Technique: The double-frying method ensures crispy wonton mozzarella sticks. Fry them once at a lower temperature until golden brown, then increase the heat for a second fry until they are crispy and bubbly.
- Right Oil Temperature: Make sure the oil is hot enough before frying the wonton mozzarella sticks. Use a thermometer to measure the oil temperature, and adjust accordingly.
- Don't Overcrowd the Pan: Avoid overcrowding the frying pan with wonton mozzarella sticks as this can lower the oil temperature and prevent even cooking.
- Use Fresh or Low-Moisture Mozzarella: Fresh mozzarella provides a gooey texture, while low-moisture mozzarella melts well and prevents excessive oiliness.
Conclusion:
Using wonton wrappers to make mozzarella sticks offers a delightful twist on this classic appetizer. The crispy wonton exterior pairs perfectly with the melted, gooey mozzarella cheese inside. These wonton mozzarella sticks are a versatile dish that can be served as a party snack, appetizer, or even a main course paired with your favorite dipping sauce. So, impress your friends and family with this easy-to-make, delicious recipe, and enjoy the amazing combination of textures and flavors.
