I love Chic chi's Fiesta Style Salsa and was looking for a recipe on here that was similar and I couldn't find one. I canned Wonderful Salsa, recipe #9272 last year and LOVED it, so I created my own "Fiesta" Salsa. I would like to thank Jazze22 for sharing her Wonderful Salsa recipe. I will post the recipe as I made it, I did make a couple changes from the original recipe. I hope if you try it, that you like it as much as I do. To cut the heat remove the veins and seeds. Also, wear gloves when handling the peppers.

Number Of Ingredients 14

8 cups tomatoes, peeled, chopped and drained
2 1/2 cups onions, chopped (I use sweet onions)
1 1/2 cups green peppers
1 cup jalapeno pepper, chopped
1 cubanelle pepper, chopped
6 garlic cloves, minced
1 teaspoon cumin
1 teaspoon black pepper
1/8 cup canning salt
1/3 cup vinegar
1 (15 ounce) tomato sauce
1 (12 ounce) tomato paste
1 (15 ounce) black beans, drained and rinsed
2 cups frozen corn

Steps:

  • Mix all together and bring to a slow boil for 10 minutes.
  • Seal in sterilized jars and cook in a hot water bath for 10 minutes.

I am a salsa lover and Paul Newmans has a peach salsa that is great, so I went in search of a peach salsa (more tomato then peaches) and couldn't find any. I canned Wonderful Salsa, recipe #9272 last year and decided to try and can my own peach salsa. I would like to thank Jazze22 for sharing her orginal recipe. I thought that with the changes and the fact that I coudln't find one posted, I should post it in case others might be looking for a peach salsa. To reduce the heat, take out the veins and seeds in the peppers. Remember to wear gloves when handeling the peppers. I hope you enjoy it as much as I do.

2 1/2 cups onions,chopped 1/3 c sugar
1 1/2 cups green peppers 1/3 c vinegar
1 cup jalapeno pepper, chopped 1 (15oz) can tomato sauce
6 cloves garlic, minced 1 (12oz) can tomato paste
2 tsp cumin
2 tsp pepper

  • Directions 1 Mix all together and bring to a slow boil for 10 minute. 2 Seal in jars and cook in hot water bath for 10 minute. 3 This is a medium salsa. This is also a chunky salsa so if you want a smoother salsa cut your veggies into smaller pieces. 4 Yields 3-6 quarts or pints.

1 lb roma tomato, chopped
4 sprigs fresh cilantro
1/2 large onion, chopped
1/4 lime, peeled
4 cloves elephant garlic
1/2 green bell pepper, chopped
1 jalapeno pepper
salt

Steps:

  • Chop garlic, green pepper and cilantro until fine (I use a food processor).
  • Chop the balance of the ingredients, except the jalapeno pepper; add to garlic/pepper mixture.
  • Chop the jalapeno pepper; add to mixture to desired heat.
  • Adjust all other ingredients to suit taste.
  • Note: you may substitute regular garlic for the elephant garlic (adjust to suit taste).
