WONDERFUL SALSA

Wonderful Salsa image

This is the best salsa recipe I've found so far and I've tried about a dozen. I got it from one of the local hospital cookbooks that are sold in my area. I changed it a bit and have been canning it for years. The reason I plant a garden is for this salsa. We would be lost without it. Hope you like it as much as we do. One of our members who is a food scientist took this salsa to work, tested the pH and found it measured under 4.0 (well within the safety limit for boiling water bath processing).

Time 5m

Number Of Ingredients 8

4 small jalapeƱo peppers* ((leave the seeds in for an extra kick))
1/2 onion, chopped
3 garlic cloves
1/4-1/2 cup fresh cilantro
6 tomatoes of varying sizes, chopped
1 1/2 to 2 teaspoons ground cumin
1 teaspoon sea salt + more to taste
2 tablespoons lemon or lime juice ((about 1/2 lemon, juiced))

Steps:

  • Add all ingredients to the bowl of a food processor. I like to add in the jalapeƱos, onion and garlic first and then the cilantro and tomatoes, so the tomatoes do not get too liquid-y. Pulse about 10 or so times and until all ingredients are combined and diced, but be sure to stop before the salsa becomes too watery. However, you can pulse longer if you do like your salsa with more liquid.
  • Taste the salsa and add more ingredients as desired. I would advise stirring in the extra ingredients, not pulsing in the food processor. The salsa will become too watery, quickly.
  • Transfer to a bowl and enjoy!
  • I prefer to refrigerate salsa for 1 day prior to serving to allow the flavors to intensify. Salsa will keep for about 1 week in an airtight container or jar in the fridge; however, it's never lasted that long in this household.

WONDERFUL SALSA WITH PEACHES

Wonderful Salsa With Peaches image

I am a salsa lover and Paul Newmans has a peach salsa that is great, so I went in search of a peach salsa (more tomato then peaches) and couldn't find any. I canned Wonderful Salsa, recipe #9272 last year and decided to try and can my own peach salsa. I would like to thank Jazze22 for sharing her orginal recipe. I thought that with the changes and the fact that I coudln't find one posted, I should post it in case others might be looking for a peach salsa. To reduce the heat, take out the veins and seeds in the peppers. Remember to wear gloves when handeling the peppers. I hope you enjoy it as much as I do.

Time 1h15m

Yield 8 pints, 8 serving(s)

Number Of Ingredients 13

6 cups tomatoes, peeled, chopped and drained
2 1/2 cups onions, chopped (I used sweet onions)
1 1/2 cups green peppers
1 cup jalapeno pepper, chopped
1 cubanelle pepper, chopped
6 garlic cloves, minced
2 teaspoons cumin
2 teaspoons black pepper
1/8 cup canning salt
1/3 cup vinegar
1 (15 ounce) tomato sauce
1 (12 ounce) tomato paste
4 cups peaches, chopped

Steps:

  • Mix all together and bring to a slow boil for 10 minutes.
  • Seal in sterilized jars and cook in a hot water bath for 10 minutes.

Tips:

  • Choose the right tomatoes: Roma tomatoes are ideal for salsa, as they are less juicy and have fewer seeds than other varieties.
  • Roast the tomatoes and garlic: Roasting the tomatoes and garlic intensifies their flavor and gives the salsa a smoky, caramelized taste.
  • Use fresh herbs: Fresh herbs, such as cilantro and parsley, add a bright, vibrant flavor to the salsa.
  • Don't over-process the salsa: A chunky salsa is more flavorful and has a better texture than a smooth salsa.
  • Taste the salsa and adjust the seasonings: Add more salt, pepper, or lime juice to taste, until the salsa is perfectly balanced.

Conclusion:

This elephant garlic salsa is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is perfect for dipping chips, tacos, burritos, and quesadillas. It can also be used as a marinade for chicken, fish, or tofu. With its bold flavor and smoky aroma, this salsa is sure to be a hit at your next party or gathering.
