Cheesy sausage-based filling in little cups made from baked won ton wrappers. The baked cups and filling may be prepared a day or two in advance (store covered in the refrigerator) and assembled shortly before serving.

- Preheat oven to 350 degrees F (175 degrees C). Spray a miniature muffin pan with cooking spray.

- Preheat oven to 375°. Press wonton wrappers in greased muffin cups. Bake until golden brown, 4-5 minutes., Meanwhile, in a skillet, heat oil over medium-high heat; saute onion and green pepper until tender, 3-5 minutes. CHEESY SAUSAGE WONTON BITES
Steps:
- Preheat the oven to 350 degrees F.
- Press a wonton wrapper into each cup of a mini muffin tin, pressing gently to the bottom and sides. Spray lightly with nonstick cooking spray (optional, but it helps the wrappers brown more in the oven vs staying pale colored). Bake for 6-7 minutes.
- While the wrappers parbake, heat a nonstick skillet over medium heat and add the sausage and green pepper. Cook, crumbling the sausage into small pieces, until the sausage is no longer pink and cooked through. Drain the grease very well (so the bottom of the wonton bites aren't greasy after baking). Stir in the shredded cheese and ranch (or blue cheese) dressing.
- Fill the wonton cups evenly with the sausage mixture, pressing to compact the meat mixture just a little into each cup. Bake for 10-15 minutes until the filling is sizzling. Serve warm or at room temperature.

- Preheat oven to 350 degrees.
- Spray 24 muffin cups with cooking spray.
- In each cup, gently place a wonton wrapper.
- The edges of the won ton wrapper should extend up the sides of the cups.
- Bake the wrappers 5 - 7 minutes or until they are golden brown. For best results do not over bake.
- Remove the wrappers from oven and cool until needed.
- Mix the cheeses, pepperoni, onion, olives, peppers and salad dressing together.
- Evenly fill all the won ton cups with the cheese mixture.
- Bake the filled won tons for 6 - 8 minutes or until the cheese is melted.

WON TON APPETIZERS
These are so cute! Be careful- don't let these dry out while you're finishing them off, or they'll become sticky. Keep a damp teatowel over them. They're very healthy too. The amount of wrappers needed is just an approximation. I've given two sauces, choose whichever you like. The first one is a traditional one, the second one isn't. Also, if you feel the chives are a bit fiddly, place on a tray and bake these at 170 degrees C for 10 minutes for a healthy alternative to deep frying.

- In a medium sized bowl, mix the pork mince, garlic, shallots, egg (NOT the eggwhite) and water chestnuts.
- Add the soy sauce, sugar, corn flour and pepper. Mix well.
- Take one won ton wrapper and place a teaspoon of filling into the middle.
- Wrap the wrapper around the filling to form a parcel. Pinch the edges firmly together to seal.
- Repeat until either all of the wrappers or the filling is used.
- Bring the water and salt to boil in a saucepan. Dump half of the wontons into the water.
- Meanwhile, line two plates with kitchen paper.
- When the water is boiling again, use a slotted spoon to remove the wontons. Place them on one of the plates. Cover with a damp tea towel.
- Dump the other half of the wontons into the pot. When the water starts boiling again, remove the wontons and place on the other plate. Cover with another damp tea towel.
- Using the thin green end of the chive, take a wonton and tie a knot around the neck of the wonton. Carefully tighten. Use scissors and trim so that the ends are even. Place on serving plate.
- Repeat with remaining wontons.
- Serve warm with dipping sauces.
- For sauce 1: Mix in a bowl and serve.
- For sauce 2: Place the jam in a bowl and heat on low in the microwave for 30-45 seconds, or until soft.
- Add the sweet chilli sauce and fish sauce, combine and serve.
