  • Preheat the oven to 425 degrees F.

5 pounds rutabaga, peeled and cut into 2x1/2 inch pieces
5 pounds parsnips, peeled and cut into 2x1/2 inch pieces
5 pounds carrots, peeled and cut into 2x1/2 inch pieces
¾ teaspoon salt
1 ¼ cups vegetable oil
¼ cup dried basil
salt and ground black pepper to taste
1 ¼ cups chopped fresh parsley

Steps:

  • Place the rutabaga in a pan and cover with water. Add 1/4 teaspoon of salt. Bring to a boil, reduce heat to medium, cover, and simmer until tender and easily pierced with a fork, about 5 minutes. Drain well, and cool completely. Repeat steps to cook the parsnips and carrots.
  • Place completely cooled vegetables in resealable freezer bags. Refrigerate for 1 to 2 days, or freeze up to 1 month. To thaw the vegetables, refrigerate overnight and drain.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Pour the vegetable oil into a rimmed baking dish. Place the vegetables into a large mixing bowl and toss with the basil, salt, and pepper. Place the pan in preheated oven to heat for 5 minutes. Add the vegetables and toss to coat with the oil.
  • Roast vegetables in preheated oven, turning every 10 minutes, until tender and golden brown, about 30 minutes. Sprinkle with parsley before serving.

3 cups apple cider (or apple juice)
1 cup semisweet white wine (Riesling or Gewurztraminer)
3 tablespoons butter
1 1/4 lbs turnips
1 1/4 lbs parsnips

1 1/4 lbs rutabagas (swede)
salt and pepper

Steps:

  • Combine the apple cider and wine in a heavy saucepan and reduce to 3/4 cup. This will take about 30 minutes.
  • Whisk in the butter until smooth.

  • Peel all the vegetables and cut in to 1/2 inch pieces.

1/4 teaspoon salt
2 1/2 cups vegetable broth or 2 1/2 cups reduced-sodium chicken broth
1 cup water
3/4 cup cornmeal

  • Preheat oven to 500°F.

Steps:

Add the thyme, salt, pepper and remaining oil; seal bag and shake to coat. Arrange with vegetables. Bake 10-15 minutes longer or until tender. Arrange in an ovenproof dish; drizzle with vinegar and sprinkle with cheese. Bake for 2-3 minutes or until cheese is melted. Sprinkle with hazelnuts.

This is a simple vegan dish that's healthy, but filling. You can also serve this over mashed potatoes, rice or your favorite grain. To make a stew like dish do not drain liquid but add an addtional 1/2 cup of water with 1 tablespoon of cornstarch dissolved in it after 25 minutes, recover and bake for the remaining time.

3 peeled cubed turnips
1 1/2 cups baby carrots, whole
1 cup sliced mushrooms
1 cup Brussels sprout, halved
1 cup cubed seitan
1 cup vegetable broth
1 teaspoon salt
1 teaspoon thyme
1 1/2 teaspoons minced garlic
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper
1 1/2 tablespoons olive oil

Steps:

  • Preheat oven to 375 degrees.
  • Lightly brown cubed seitan in a pan on medium heat using 1/2 tablespoon of olive oil.
  • Put vegetables and browned seitan in a 9x13 glass baking dish and toss with 1 tablespoon olive oil.
  • Add thyme, peppers, salt, garlic and vegetable broth and mix.
  • Cover with foil and bake for 25 minutes.
  • Carefully remove from oven and drain liquid,.
  • Bake for an addtional 15-20 minutes.

This is a Delia Smith recipe, which I love and use often, so thought I'd share. It introduced me to celeriac, which isn't the same as celery, by the way. You can prepare the vegetables a couple of days in advance, if need be, and keep sealed in a plastic bag in the fridge.

12 shallots, peeled
12 ounces peeled and deseeded butternut squash
12 ounces peeled sweet potatoes
12 ounces peeled swede
12 ounces peeled celeriac
1 tablespoon freshly chopped mixed herbs (rosemary and thyme, for example)
2 large garlic cloves, peeled and crushed
3 tablespoons olive oil
salt & freshly ground black pepper

Steps:

  • Preheat oven to gas mark 7/425F/220°C.
  • You will need a large baking tray - approx 11 x 16 inches.
  • Cut the vegetables into large, chunky pieces - about 11/2 inches/4cm - leaving the celeriac unti last as it will discolour if left in the open air too long. Put vegetables in a large bowl, add the herbs, garlic, olive oil and lots of seasoning and mix (use your hands). Spread the vegetables out on the baking tray and cook in the pre-heated oven on a high shelf for 30 - 40 minutes, until they're tender and turning brown at the edges.
