1/4 cup red-wine vinegar
1 small clove garlic, minced
Kosher salt and freshly ground pepper
1/2 cup extra-virgin olive oil
1 small bunch lacinato kale (8 ounces), stems removed, leaves sliced into ribbons (6 cups)
1 avocado, pitted, peeled, and sliced
1 cup cherry tomatoes, halved
1/2 cup Crispy Shiitakes
1 1/2 cups All-Purpose Baked Tofu
3 ounces blue cheese, crumbled

2 Little Gem lettuces , chopped
4 celery sticks, chopped
1 cooked chicken breast and 1 cooked chicken leg, skinned and shredded

4 tbsp olive oil
2 tbsp white wine vinegar
