- Preheat oven to 350°F. Spray bottom of 9-inch-diameter springform pan with nonstick spray. Line bottom with foil; spray foil. Wrap outside of pan with foil.
- Melt 3 tablespoons butter in large nonstick skillet over medium-high heat. Add apples; sprinkle with 1 tablespoon sugar. Sauté apples until almost tender and beginning to brown, about 6 minutes. Sprinkle with 3 tablespoons sugar. Increase heat to high and toss until sugar melts and apples are deep brown, about 4 minutes. Pour apple mixture onto large plate (do not clean skillet).

- Spoon batter evenly over apples. Bake cake until tester inserted into center comes out clean, about 1 hour 15 minutes. Cool cake in pan 5 minutes.
- Cut around cake; remove pan sides. Cool cake 15 minutes longer. Place platter atop cake; invert cake onto platter. Remove pan bottom and foil. Replace any dislodged apples. Rewarm remaining caramel sauce. Serve cake warm or at room temperature with sauce.

I found this online and thought it sounded like a fun thing to do with the kids. I haven't made it, 'cause there is no snow in NW Louisiana! If you're lucky enough to have some fresh snow in your yard..it might just be the thing to keep the kids busy.

WINTER CAKE
I made this cake for my daughter Kezia's 4th birthday. It was a winter themed party and my husband even built a little toboggan slide in our backyard. This is a fun cake to make and a real show piece! A little time consuming, but worth every smile on my daughter's face! Prep time does not include cooling time.

In a large mixing bowl, combine the ginger, golden and dark raisins, dates, and cherries. Pour the rum over the fruit, toss well, cover loosely with plastic wrap, and set aside for 1 hour. 3. Set the oven at 275 degrees. 4. In a bowl, sift the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cloves. 5. In an electric mixer, cream the butter on medium speed for 3 minutes. Add the light brown sugar in 2 additions, beating for 1 minute on medium-high speed after each addition. Add the granulated sugar and continue beating for 1 minute more. Beat in the eggs, one at a time. Blend in the vanilla and apricot preserves, 6. With the mixer set on low speed, add flour mixture in 3 additions, just until it is absorbed. Scrape down the sides of the bowl often. 7. Remove the bowl from the mixer stand. Add marinated fruit and liquid and walnuts. Mix well to combine. Spoon the batter into the pan and smooth the top 8. Bake the cake for 2 hours to 2 hours and 15 minutes, or until a wooden pick inserted into the cake is clean with a few stray crumbs when withdrawn. Carefully invert the cake onto another cooling rack, peel away the parchment paper, then invert again so the cake is right-side up. Cool completely. Lisa
Tips:
- Choose ripe, juicy oranges. This will ensure that your cake is packed with flavor.
- Zest the oranges before juicing them. This will release the essential oils from the peel and give your cake a more intense orange flavor.
- Don't overmix the batter. Overmixing can make the cake tough.
- Bake the cake until a toothpick inserted into the center comes out clean. This will ensure that the cake is cooked through.
- Let the cake cool completely before serving. This will allow the flavors to develop and the cake to set.
Conclusion:
This winter cake is a delicious and festive treat that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. With its moist texture, tangy orange flavor, and sweet glaze, this cake is sure to be a hit. So next time you are looking for a special dessert, give this winter cake a try. You won't be disappointed!
