SEAFOOD LINGUINI WITH WHITE WINE SAUCE
We were craving shrimp and white wine sauce on night, and this is what I came up with. Bay scallops were on sale at the store, so I threw those in too. Please feel free to use any white wine you like. I happened to have a nice bottle of sauvignon blanc on hand, and it worked just fine. As a matter of fact, it tasted amazing. Note on the sea salt: I have some Tuscan flavored sea salt which is what I used for seasoning. If you don't have a flavored salt, please feel free to add some dried spices to taste such as dried Italian spice or a little rosemary. This also tastes great reheated the next day after the pasta absorbs more of the sauce.

Tips:
- To make a flavorful and aromatic wine sauce, choose a high-quality white wine that is dry and not too sweet. Some good options include Sauvignon Blanc, Pinot Grigio, or Chardonnay.
- Use fresh seafood for the best results. If using frozen seafood, thaw it completely before cooking.
- Do not overcrowd the pan when cooking the seafood. This will prevent it from cooking evenly and may result in overcooked or undercooked seafood.
- Cook the seafood until it is just opaque. Overcooking will make it tough and rubbery.
- Add the wine and other ingredients to the pan after the seafood has been cooked. This will prevent the wine from evaporating and losing its flavor.
- Simmer the sauce for a few minutes to allow the flavors to meld together.
- Serve the wine sauce over the seafood immediately.
Conclusion:
This versatile wine sauce is a delicious and elegant way to enhance the flavor of seafood. It is easy to make and can be tailored to your own taste preferences. With its bright, acidic flavor and creamy texture, this sauce is sure to impress your guests. Whether you are serving it over grilled shrimp, sautéed scallops, or roasted salmon, this wine sauce is sure to be a hit. So next time you are looking for a special way to prepare seafood, give this wine sauce a try. You won't be disappointed!
