Provided by lorik

Number Of Ingredients 11

2 tablespoons extra-virgin olive oil, plus more for brushing
2 shallots, minced
2 garlic cloves, minced
1 cup ketchup
1 cup Pinot Noir
2 tablespoons light brown sugar, packed
1 chipotle chile in adobo sauce, seeded and minced
1 tablespoon Dijon mustard
Kosher salt
Pepper
12 mixed chicken drumsticks and thighs

Steps:

  • In a medium saucepan, heat the 2 tablespoons of olive oil. Add the shallots and garlic and cook over moderate heat, stirring, until softened, 3 to 5 minutes. Whisk in the ketchup, wine, sugar, chipotle and mustard. Bring to a boil over moderately high heat, then simmer over moderately low heat, stirring frequently, until thickened, about 15 minutes. Let cool slightly, then puree in a blender until smooth. Season with salt and pepper. Preheat the oven to 425°F. Line a large rimmed baking sheet with foil and put a baking rack on it. Season the chicken with salt and pepper and put on the rack. Roast for 15 minutes, until the skin is lightly browned. Brush the chicken with some of the sauce and roast for 40 minutes longer, turning and basting every 10 minutes, until nicely glazed and an instant-read thermometer inserted in the thickest piece registers 165°F. Transfer to a platter and serve. Make Ahead: The barbecue sauce can be refrigerated for up to a week.

Yield 4 servings

Number Of Ingredients 17

4 cups water
1 lemon, quartered and juiced
1/4 cup sugar
1 cup kosher salt
Four 6-ounce boneless chicken breasts with skin
4 drops liquid smoke
4 tablespoons unsalted butter, softened
8 sage leaves
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
1 tablespoon olive oil
1/2 sweet onion, chopped
8 ounces baby bella mushrooms, sliced
1/4 teaspoon cayenne pepper
1/2 cup semidry white wine
1 1/2 cups chicken stock
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 425 degrees F.
  • In a large bowl mix together water, lemon juice, sugar and salt until dissolved. Add lemon quarters and chicken. Marinate for 30 minutes. Remove from marinade and pat dry. Preheat a grill pan over medium heat. Massage 1 drop of liquid smoke into each chicken breast. Salt and pepper generously then rub 1 tablespoon butter over and under skin of each chicken breast, placing 2 sage leaves underneath the skin. Place on hot grill, skin side down, until skin is golden brown, about 5 minutes. Transfer chicken to a baking sheet and bake until cooked through, about 25 minutes.
  • Meanwhile for the white wine mushroom sauce: In a large saute pan over medium heat, melt 2 tablespoons butter with olive oil. Add onions, mushrooms and cayenne pepper. Saute until onions are translucent and mushrooms are tender, about 8 minutes. Add wine and reduce until it's almost evaporated. Add chicken stock and simmer until reduced by one third. In a small bowl press together remaining butter and flour with fingertips until well blended, then slowly add to the sauce while stirring with a wooden spoon. Simmer until sauce resembles loose gravy, about 5 minutes. Serve warm with the chicken.

Tips:

  • Choose the right wine: Not all wines are created equal for cooking. For this recipe, a dry red wine with a bold flavor, such as Cabernet Sauvignon or Merlot, is recommended. This will help to enhance the flavor of the chicken and sauce.
  • Marinate the chicken: Marinating the chicken in the wine and spices for at least 30 minutes, or up to overnight, will help to tenderize the meat and infuse it with flavor.
  • Cook the chicken over indirect heat: This will help to prevent the chicken from drying out and burning. If you are using a charcoal grill, place the chicken on the grate over the drip pan. If you are using a gas grill, turn off the burners under the chicken and cook it over the unlit burners.
  • Baste the chicken frequently: Basting the chicken with the wine and sauce mixture will help to keep it moist and flavorful. Do this every 10-15 minutes during the cooking process.
  • Let the chicken rest before serving: Once the chicken is cooked through, let it rest for a few minutes before serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful chicken.

Conclusion:

This wine BBQ chicken recipe is a delicious and easy-to-make dish that is perfect for any occasion. The combination of the bold red wine and the spices creates a flavorful and tender chicken that is sure to be a hit with your family and friends. Whether you are cooking for a weeknight dinner or a special occasion, this recipe is sure to please.
