Something like a cross between an omelet casserole and bread pudding, strata is perfect for serving a crowd at breakfast or brunch as it can be made ahead of time.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 1h10m

Number Of Ingredients 8

1 pound bulk sweet or spicy Italian sausage
2 shallots, finely chopped
1 bunch Swiss chard (1 pound), stems diced medium, leaves torn into 2-inch pieces and rinsed
Coarse salt and ground pepper
1 day-old baguette, cut into 1/2-inch slices
2 1/2 cups whole milk
7 large eggs, lightly beaten
1 cup shredded Gruyere cheese (3 ounces)

Steps:

  • Preheat oven to 375 degrees. Heat a large skillet over medium-high. Add sausage and cook, breaking up meat with a wooden spoon, until browned, 5 minutes. Transfer sausage to a small bowl, leaving behind as much fat as possible. Add shallots and chard stems to skillet and cook over medium until shallots are translucent, 3 minutes. Season with salt and pepper.

In a large bowl, whisk together milk and eggs, season with salt and pepper, and pour evenly over top. Firmly press on strata to submerge bread in egg mixture. Cover dish tightly with foil and let sit 10 minutes (or refrigerate up to overnight).
  • Bake strata 45 minutes. Uncover, sprinkle with cheese, and bake until cheese melts and egg mixture is mostly absorbed and set in center, 6 to 10 minutes. Let cool 10 minutes before serving.

Tips:

  • Choose the Right Bread: Use a sturdy, hearty bread that can hold up to the custard and cheese without getting soggy. Sourdough, French bread, or a good quality white bread are all good options.
  • Use Fresh Ingredients: The quality of your ingredients will greatly impact the flavor of your strata. Use fresh eggs, milk, and cream, and choose a flavorful cheese that melts well.
  • Layer Wisely: When assembling the strata, start with a layer of bread, then a layer of cheese, then a layer of custard, and so on. This will ensure that each bite is filled with flavor.
  • Don't Overcrowd the Dish: Make sure you have a baking dish that is large enough to accommodate the strata without overcrowding it. If the strata is too crowded, it will not cook evenly.
  • Bake Until Golden Brown: Bake the strata until it is golden brown and a toothpick inserted into the center comes out clean. This will take about 45 minutes to an hour.
  • Let It Rest: Allow the strata to rest for at least 10 minutes before serving. This will help it to set and will make it easier to slice.

Conclusion:

Wine and Swiss Strata is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is easy to make and can be tailored to your own preferences. With its rich, cheesy flavor and tender, custardy texture, Wine and Swiss Strata is sure to be a hit with your family and friends.
