CLASSIC WILTED LETTUCE SALAD

Classic Wilted Lettuce Salad image

When we were kids, my sister and I would prepare the freshly picked lettuce for this wilted lettuce salad recipe, rinsing it several times and carefully drying it. As we did so, we quibbled about the portions we'd each have. Somehow, it seems she always managed to get more! We still can't get enough of this salad. -Doris Natvig, Jesup, Iowa

1 egg, beaten

1/3 cup bread crumbs
1 teaspoon olive oil

Yield Makes 8 (side dish) servings

Number Of Ingredients 5

2 tablespoon corn oil
12 garlic cloves, peeled and smashed
4 bunches watercress (about 20 ounces), trimmed (about 12 packed cups)
1 1/2 teaspoon kosher salt
1/4 cup chicken stock or reduced-sodium broth

Steps:

  • Heat a dry 12-inch heavy skillet or wok (not nonstick) over medium heat until hot. Add oil, then garlic, and cook, tossing constantly, until garlic is deep golden. Add watercress and salt, then reduce heat to medium-low and cook, tossing constantly, 45 seconds. Add stock and toss again, then cook, covered, until stems are crisp-tender and leaves are just wilted, about 20 seconds.
  • Serve with garlic cloves arranged on top.

Tips:

  • Choose tender watercress: Look for young, vibrant bunches with crisp leaves and stems.
  • Wash watercress thoroughly: Rinse the watercress under cold water to remove any dirt or debris.
  • Use a light touch when wilting: Overcooking will make the watercress tough, so wilt it just until it is slightly softened.
  • Don't be afraid to experiment with different dressings: The simple vinaigrette in this recipe is a great starting point, but you can also try a creamy dressing, a citrus-based dressing, or a nutty dressing.
  • Add other ingredients to your salad: Some popular additions include crumbled bacon, chopped nuts, grated cheese, or sliced hard-boiled eggs.

Conclusion:

Wilted watercress salad is a delicious and healthy side dish or light lunch. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a quick and easy salad recipe, give this wilted watercress salad a try!
