Time 1h5m

Yield 8-10 serving(s)

Number Of Ingredients 8

1/4 cup unsalted butter
1/4 cup light-flavored honey (I like to use local if possible)
2 tablespoons Scotch whisky
2 tablespoons packed dark brown sugar
3 lbs sweet potatoes or 3 lbs yams, peeled and cut into 1-inch chunks
3/4 teaspoon kosher salt
3/4 teaspoon fresh ground black pepper
1 cup chopped walnuts (optional) or 1 cup pecans (optional)

Steps:

  • Preheat oven to 375°F.
  • Butter 2-quart casserole dish.
  • In small saucepan over med-high heat, combine butter, honey, whisky, and sugar. Bring to simmer, whisking until butter and sugar are melted, reduce the heat to med-low and simmer, uncovered for 10 minutes.
  • In large bowl (or ziplock bag if you let the butter mix cool a bit), toss potatoes with butter mixture, salt, and pepper. Transfer to prepared dish and bake, tossing occasionally, until tender and glazed, about 45 minutes. Serve warm.
  • *Optional, add chopped nuts mixed throughout or sprinkle on top for last half of baking.

Time 1h50m

Yield 8 servings

Number Of Ingredients 10

3 pounds sweet potatoes (about 4 large)
1 cup pecans
4 tablespoons unsalted butter, plus more for preparing baking dish
3/4 cup agave syrup, preferably amber
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/4 cup whiskey
2 cups crisp apples, peeled, cored, and sliced into 1-inch pieces

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the potatoes on a baking sheet and cook the potatoes whole, do not pierce. Bake for 45 minutes to 1 hour. Lightly squeeze the potatoes - if they are soft, they are done. Let cool.
  • In a small saute pan over high heat, add the pecans and lightly toast. Add 4 tablespoons of butter, reduce the heat to medium, add the agave and spices, and allow to simmer for 4 to 5 minutes. Add the whiskey and continue to simmer for 5 minutes more.
  • Peel the potatoes and cut into 1/2-inch slices. Butter the bottom and sides of an 8 by 8-inch baking dish. Arrange the sweet potatoes, alternating with the apples. Pour the whiskey-pecan mixture over the top and place in the oven.
  • Bake for 30 minutes, basting the top with the whiskey sauce once at 15 minutes.
  • Remove and serve immediately.

2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt

1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
3 tablespoons honey
2 1/2 pounds sweet potatoes, cut into 1-inch chunks (about 6 cups)
1/4 cup Thai sweet chili sauce

Tips:

  • Choose the right sweet potatoes. Look for firm, brightly colored sweet potatoes with smooth skin. Avoid any potatoes with bruises or blemishes.
  • Wash the sweet potatoes thoroughly. Scrub the potatoes with a vegetable brush to remove any dirt or debris.
  • Prick the sweet potatoes with a fork. This will help the glaze to penetrate the potatoes and cook them evenly.
  • Roast the sweet potatoes until they are tender. The potatoes should be cooked through but still slightly firm in the center.
  • Make the glaze while the sweet potatoes are roasting. This will give the flavors time to meld together.
  • Brush the glaze on the sweet potatoes and continue roasting. This will help the glaze to caramelize and give the potatoes a beautiful shine.
  • Serve the sweet potatoes immediately. They can be enjoyed as a side dish or as a main course.
