3 C water
3/4 C pecan halves
1 C yellow raisins
Grated rind of one medium orange
1/4 C fresh mint, chopped
1 tbsp finely diced onion
1/4 C olive oil
1/3 C, plus 1 tbsp fresh orange juice
1 tsp salt
Freshly ground black pepper, to taste

1/2 cup radishes, finely diced
1/2 cup red onions, finely diced
1/2 cup pecans, toasted and chopped
1/2 cup fresh parsley, chopped
1/2 cup raisins
1/2 cup golden raisins
1/4 cup extra-virgin olive oil
3 tablespoons white wine vinegar
1 1/2 tablespoons granulated sugar
1 tablespoon curry powder
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

1 1/4 cups chicken stock, preferably homemade
2 tablespoons unsalted butter
kosher salt
1 cup green seedless grape, halved
1/2 cup scallion, sliced in rounds, white and light green parts (2 scallions)
1 cup pecan halves, toasted and coarsely chopped
1 teaspoon grated orange zest
2 tablespoons freshly squeezed orange juice
1 teaspoon fresh ground black pepper

2 cups wild rice (either solely wild rice, or a mixture of rices with wild rice)
4 -5 cups vegetable broth (amount of liquid depends on what kind of rice you use) or 4 -5 cups water (amount of liquid depends on what kind of rice you use)
1 cup pecans (chopped or whole)
1 cup golden raisin
1/3 cup fresh cilantro, finely chopped
1/2 cup fresh parsley, finely chopped
2 to 3 oranges, juice and zest of
1/2 juice and lemon, zest of
1 -2 garlic clove, grated
1/2 cup white distilled vinegar
salt and pepper

Steps:

  • Rinse the rice in a fine strainer. Combine rice and cooking liquid in a large pan, bring to a boil, reduce heat and simmer for about 30-45 minutes. Be careful not to overcook the rice, you want it to be a little chewy because it will soak up the dressing later. After rice is done cooking, use a fine strainer to rinse rice under cold water.
