Time 40m

Yield 16 cakes, 5-6 serving(s)

Number Of Ingredients 11

1 1/2 cups cooked wild rice
1 cup carrot, grated (2 to 3 carrots)
1/2 cup onion, finely chopped
1/4 cup parmesan cheese, grated
1/4 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon baking powder
1/3 cup all-purpose flour
2 eggs, beaten
vegetable oil, for frying

  • Combine first 7 ingredients.
  • Add the baking powder and flour, stir well.
  • Add eggs and stir.
  • Heat a frying pan over medium-high heat.
  • Add oil.
  • Drop mounds of batter into pan and flatten slightly to make cakes about 3-inches across.
  • Cook until browned on bottom and crispy.
  • Turn cakes and cook until browned on the other side (about 3 minutes).
  • Set aside and keep warm.
  • Continue frying until all the batter is used.
  • Add more oil as necessary.
  • Serve hot.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better the griddle cakes will taste. If possible, use wild rice that has been harvested within the past year.
  • Cook the wild rice properly: Wild rice takes longer to cook than white or brown rice. Be sure to follow the directions on the package of wild rice that you are using.
  • Use a good quality griddle: A well-seasoned cast iron griddle is ideal for cooking griddle cakes. If you do not have a cast iron griddle, you can use a non-stick skillet.
  • Cook the griddle cakes over medium heat: Medium heat will help to prevent the griddle cakes from burning. If the heat is too high, the griddle cakes will brown too quickly on the outside and be undercooked on the inside.
  • Flip the griddle cakes only once: Flipping the griddle cakes too often will make them tough. Flip the griddle cakes only once, when the edges are golden brown and bubbles begin to form on the surface.

Conclusion:

Wild rice griddle cakes are a delicious and nutritious breakfast or brunch option. They are easy to make and can be customized to your liking. Serve wild rice griddle cakes with your favorite toppings, such as butter, syrup, fruit, or yogurt. These griddle cakes are a great way to use up leftover wild rice. They are also a good source of fiber, protein, and iron.
