1 lb venison, ground
1 1/2 c wild rice, cooked
1 can(s) (10 3/4 oz.) cream of mushroom soup
1 can(s) (10 3/4 oz.) cream of chicken soup
1 c sliced celery
1 c sliced mushrooms
1 c water
1 chopped onion
3 Tbsp soy sauce

Steps:

  • 1. Brown venison in a heavy skillet.
  • 2. Add the remaining ingredients and mix well.
  • 3. Pour into a 2 1/2 or 3 quart casserole dish.
  • 4. Bake, covered at 350 degrees for 30 minutes.
  • 5. Uncover, and bake an additional 30 minutes.

Tips:

  • Choose high-quality venison: Use venison that is fresh, lean, and has been properly field dressed and butchered. This will ensure the best flavor and texture for your casserole.
  • Marinate the venison: Marinating the venison in a flavorful mixture of herbs, spices, and liquids will help tenderize the meat and infuse it with delicious flavors. Some popular marinade ingredients include olive oil, red wine, garlic, rosemary, and thyme.
  • Cook the venison properly: Venison should be cooked to an internal temperature of 145°F (63°C) for medium-rare, 155°F (68°C) for medium, and 165°F (74°C) for well-done. Overcooking venison will make it tough and dry.
  • Use a variety of vegetables: Wild rice and venison casserole is a great way to use up leftover vegetables. Some good choices include carrots, celery, onions, mushrooms, and bell peppers. You can also add frozen vegetables to the casserole.
  • Choose a flavorful cheese: The cheese you use in your wild rice and venison casserole will greatly affect the flavor of the dish. Some good choices include sharp cheddar, Parmesan, Gruyère, and Swiss cheese.
  • Serve with a side dish: Wild rice and venison casserole is a hearty and filling dish, but it can be served with a side dish of your choice. Some good choices include roasted vegetables, mashed potatoes, or a green salad.

Conclusion:

Wild rice and venison casserole is a delicious and hearty dish that is perfect for a cold winter night. It is easy to make and can be tailored to your own tastes. With its combination of wild rice, tender venison, flavorful vegetables, and melted cheese, this casserole is sure to be a hit with your family and friends.
