2 tablespoons butter
8 ounces sliced fresh mushrooms
3 cups uncooked wild rice
8 green onions, sliced
1 teaspoon salt
1/2 teaspoon pepper
4 cans (14-1/2 ounces each) vegetable broth
1 cup chopped pecans, toasted
1 cup dried blueberries

Steps:

  • In a large skillet, heat butter over medium heat. Add mushrooms; cook and stir 4-5 minutes or until tender. In a 5-qt. slow cooker, combine rice, mushrooms, onions, salt and pepper. 3 1/2 cups good chicken stock
1 cup wild rice, thoroughly rinsed
Kosher salt and freshly cracked black pepper
1 cup roughly chopped dried cherries
1/2 cup toasted and roughly chopped pecans
1/4 cup chopped flat-leaf parsley
