Number Of Ingredients 8

1 medium-size red bell pepper
1 medium-size green bell pepper
1 tablespoon olive oil
1/2 pound assorted wild mushrooms (such as oyster, crimini, morel and stemmed shiitake), sliced
1 1/2 teaspoons chopped fresh rosemary
1 10-ounce purchased fully baked thin pizza crust
1 cup shredded Fontina cheese
1/2 cup thinly sliced red onion

Steps:

  • Char bell peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel, seed and thinly slice peppers.

  • Place crust on baking sheet. Top with cheese, onion, peppers and mushrooms. Bake pizza until heated through and cheese melts, about 15 minutes.

Tips:

  • Use a variety of mushrooms. This will give your pizza a more complex flavor. Some good options include shiitake, oyster, cremini, and chanterelle mushrooms.
  • Sauté the mushrooms before adding them to the pizza. This will help to bring out their flavor and prevent them from becoming soggy.
  • Use a good quality olive oil. This will help to give your pizza a rich, flavorful crust.
  • Don't overload the pizza with toppings. This will make it difficult to cook evenly and can result in a soggy crust.
  • Bake the pizza at a high temperature. This will help to create a crispy crust and prevent the toppings from becoming overcooked.
