NO-CREAM WILD MUSHROOM PASTA SAUCE

No-Cream Wild Mushroom Pasta Sauce image

I love this over 3-cheese ravioli, but you can easily use this over bow tie, linquini, or your favorite pasta. It is not difficult, rich in flavor and a bit lighter than a heavier cream sauce. The variety of all three mushrooms in this is what makes it so good. Now, I love shitake and porcini mushrooms, so I buy one or the other fresh, and the other dried to give a nice balance. But use what you can find. The dried mushrooms in this dish really add flavor. And, like all pasta dishes, garnish with good grated cheese - my choice is pecorino romano with this earthy mushroom dish.

Provided by SarasotaCook

Categories     < 60 Mins

Time 50m

Yield 3 cups sauce, 4-6 serving(s)

Number Of Ingredients 15

8 ounces shiitake mushrooms, sliced
8 ounces cremini mushrooms, sliced
2 ounces dried mushrooms (I used porcini)
2 1/2 cups vegetable broth
1 cup mushroom broth (the liquid from the mushrooms you rehydrated)
1 teaspoon minced garlic
1 cup onion (cut in half and thin sliced)
4 scallions, diced (whites and greens)
1 teaspoon fresh rosemary, chopped fine
1 teaspoon dried thyme leaves
2 tablespoons fresh parsley, chopped fine
3 tablespoons olive oil
1 1/2 tablespoons cornstarch
salt
pepper

Steps:

  • Dried Mushrooms -- Rehydrate the mushrooms by adding 2 1/2 cups of boiling water to a bowl with the mushrooms and cover with plastic wrap. They will take about 10-15 minutes. Once they are re-hydrated and soft, thin slice. Don't throw away the liquid. You will be adding that to the broth.
  • Mushrooms -- In a large saute pan, add the olive oil and heat to medium high. Add in the mushrooms, onions, scallions, garlic, rosemary, thyme and rosemary. and cook about 7-10 minutes until the mushrooms get brown and the liquid from the mushrooms has evaporated, (mushrooms give off a natural liquid when cooked, but as they brown, the liquid will evaporate).
  • Once the mushrooms are brown, add in the broth (reserve 1/4 cup to add to the corn starch to make a slurry or thickening agent. This will be used to thicken your sauce at the end), and the liquid from re-hydrating the mushrooms to the mushroom and onion mixture. Cook on medium to medium low heat for about 8-10 minutes until the broth is reduced by about 1/2.
  • Finish -- Add the 1/4 reserved broth with the corn starch to make a slurry. This is what will thicken your sauce. Add to the mushrooms and bring to medium high heat. The sauce will begin to thicken. Continue to cook for a minute or two, and then add in the parsley and check for any seasoning, salt and pepper.
  • Serve -- I really love this over a 3-cheese ravioli (just store bought it fine), but you can use any pasta you like. Top with cheese and ENJOY!

WILD MUSHROOM AND BUTTER BEAN PASTA

Wild Mushroom and Butter Bean Pasta image

This is a great pasta for autumn, hearty and deeply flavorful. Wild golden chanterelle mushrooms are especially nice and often available in the fall; choose small, firm, unblemished ones. Otherwise use a mixture of pale oyster mushrooms, including royal trumpets. End-of-summer fresh shelling beans work well here, or any dried white bean, such as cannellini. The simple complementary flavors of olive oil, pancetta, garlic and rosemary are just right, mingling with lightly browned mushrooms and creamy beans. Make sure to keep the pasta firmly al dente. To get the best rosemary flavor, chop it at the last moment, and toss a rosemary sprig into the pot while the pasta is cooking.

Provided by David Tanis

Categories     pastas, main course

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 13

2 cups fresh butter beans or other shelling beans (from about 2 pounds in the pod), or 1 cup dried cannellini or other white bean, cleaned
1 small bay leaf
Salt and pepper
3 ounces thickly sliced pancetta or slab bacon, cut crosswise into 1/4-inch-wide lardons
Extra-virgin olive oil
1 medium red onion, diced
12 ounces wild chanterelle mushrooms, thickly sliced or chopped or a mixture of pale oyster mushrooms
3 or 4 garlic cloves, minced
1/4 to 1/2 teaspoon crushed red pepper flakes, to taste
1 teaspoon freshly chopped rosemary, plus a sprig for the pasta pot
1 pound bucatini, spaghetti or other dry pasta
2 tablespoons roughly chopped parsley
Parmesan or pecorino cheese, grated (optional)

Steps:

  • Put beans in a pot and cover with water by 2 inches. Add bay leaf and 1/2 teaspoon salt and and bring to a boil over high heat. Reduce to a simmer and cook until tender, about 30 minutes. Let beans cool to room temperature in cooking liquid and set aside. When cool, taste and correct salt. (If using dried beans, cooking time will be about 1 hour.)
  • Prepare a large pot of water for cooking pasta and bring to a boil.
  • Put pancetta in a wide, deep skillet over medium-high heat. Add 1 tablespoon olive oil and stir to coat. Let lardons sizzle gently until crisp and golden, about 3 minutes. Add onions, season lightly with salt and cook, stirring, until lightly browned and softened, about 5 minutes. Remove onion mixture from pan and set aside.
  • Return pan to stove over high heat and add 2 tablespoons olive oil. When oil is hot, add chanterelles and stir to coat. Season generously with salt and pepper and cook, stirring until lightly browned, about 2 minutes. Turn heat to medium and stir in garlic, crushed red pepper flakes and chopped rosemary. Cook for a minute more and turn off the heat.
  • Add a handful of salt to the pasta water, then add rosemary sprig and bring to a full boil. Add bucatini and stir well. Adjust heat to keep pasta cooking briskly. Cook until firmly al dente (you should feel it is not quite done) and drain.
  • While pasta is cooking, put skillet of mushrooms back on medium-high heat. Add reserved onion-pancetta mixture and heat through, stirring. Add beans and 1 cup bean cooking liquid and bring to a simmer.
  • Add cooked pasta to pan and stir well, coating the pasta with the mushroom-bean mixture. While stirring, let pasta finish cooking, about 1 minute more, adding a little more bean liquid if necessary. Transfer to a wide pasta bowl, sprinkle with parsley and serve. Offer grated Parmesan or pecorino cheese if you wish.

WILD MUSHROOM AND PASTA GRATIN

WILD MUSHROOM AND PASTA GRATIN image

Categories     Mushroom     Bake     Vegetarian

Yield Serves 4 as a main course, 6 to 8 as a side dish.

Number Of Ingredients 12

3 ounces dried mushrooms (porcini, morels, etc.)
Fresh wild mushrooms can be used in place of the dried, if available. Domestic (button) mushrooms don't have enough flavor to carry the dish but other varieties (morels, shitakes, portabellos) would work if cut into small pieces and sauteed. You will need about a cup of mushroom pieces.
3 tablespoons sweet butter
1 tablespoon flour
1 cup flavorful chicken stock
1 1/2 cups heavy cream
salt and pepper
dash of nutmeg
2 cloves finely chopped garlic
3 tablespoons chopped fresh parsley
1 pound green fettucine noodles (regular fettucine can be used if green is not available)cooked al dente
1/3 - 1/2 cup freshly grated parmesan cheese

Steps:

  • Cover the dried mushrooms with boiling water and let soak until soft, about 20 minutes. Carefully drain, saving the liquid, and making sure no grit is in the saved liquid. If using fresh mushrooms, cut into small pieces. To make the sauce: melt 1 tablespoon butter in a medium size saucepan, stir in the flour and blend. Cook for 2 minutes over low heat, stirring so it doesn't burn. Whisk in the stock and the cream and 2 to 3 tablespoons of the reserved mushroom liquid. Season with salt, pepper and nutmeg to taste. Simmer on very low heat (or in a double boiler) for an hour or so, stirring occasionally. Cut the mushrooms into small pieces, making sure no dirt is attached to them. Saute in the butter in a large saute pan for 3 minutes over medium heat. Add the garlic and parsley, saute for 5 minutes. Add the sauce and the fettuccine. Season with salt and pepper. Put fettuccine mixture into a buttered gratin dish. Cover with the parmesan cheese and bake at 400 for 15 - 20 minutes, until the top is crusty and golden.
