2 cloves garlic, chopped
½ onion, chopped
6 hot dog sausages, chopped
4 tomatoes, chopped
½ tablespoon sugar
1 teaspoon salt
½ teaspoon pepper
7 oz heavy milk
½ lb penne pasta, raw
16 oz water
2 tablespoons green onion, chopped
parmesan cheese

Steps:

  • In a big pot, add the olive oil, the garlic, the onion and mix it well.
  • Add the hot dog sausages and mix it well. Add the tomatoes and mix it well.
  • Add the seasoning: sugar, salt and pepper. Mix it well.
  • Add the heavy milk and mix it.
  • Add the raw penne pasta, the water and mix it well.
  • Let it cook for 15 minutes, stirring each 5 minutes for the pasta not to stick on the bottom.
  • Turn off the heat, add the green onions, mix it and close the pan lid.
  • Wait 5 minutes with the pan closed before serving.
  • Serve with parmesan cheese to taste.

1 ½ pounds veal cutlets
½ cup all-purpose flour
3 tablespoons grated Parmesan cheese
2 eggs
1 teaspoon minced parsley
½ teaspoon salt
¼ teaspoon pepper
1 pinch ground nutmeg
2 tablespoons milk
1 cup dry bread crumbs
6 tablespoons butter
4 slices lemon

Steps:

  • Place each veal cutlet between two pieces of plastic wrap, and pound with the flat side of a meat mallet until about 1/4 inch thick. Dip in flour to coat.
  • In a medium bowl, stir together the Parmesan cheese, eggs, parsley, salt, pepper, nutmeg and milk. Place bread crumbs on a plate. Dip each cutlet into the egg mixture, then press in the bread crumbs to coat. Place coated cutlets on a plate and refrigerate for 1 hour or overnight.
  • Melt butter in a large skillet over medium heat. Cook the breaded cutlets until browned on each side, about 3 minutes per side. Remove to a serving platter, and pour the pan juices over them. Garnish with lemon slices.

This is a recipe I was missing from home. Lennie very kindly came up with it for me. It comes from the Company's Coming Pasta book. I have included my own variations on it. The pasta actually cooks in the sauce. I love this stuff and so did my kids!

2 (10 ounce) cans tomato soup
2 cups water
1 (10 ounce) can sliced mushrooms, with liquid
1 lb hot dog, cut up bite size
8 ounces small shell pasta
2 teaspoons chili powder

Steps:

  • In a large dutch oven, combine everything; cover; cook slowly until shells are tender but firm. This should take 15 to 17 minutes.
  • My own variation: I always browned my sliced weiners in the pot first before I added the remaining ingredients. I also added a bit of garlic powder, and topped it with cheese at the end.

While certainly not gourmet food, it's a real kid pleaser, and I thought it wasn't too bad either. Quick and easy for a weeknight meal when you have little time and nothing thawed! Make it a little more zippy for adult tastes by adding cumin and chopped cilantro or a little curry if you'd like.

6 hot dogs
1 (10 ounce) can chicken noodle soup
15 ounces water

1 (10 1/2 ounce) can vegetable soup, condensed
1 (10 1/2 ounce) can water
1/3 cup instant rice

1/4 cup fresh parsley, minced

Steps:

  • Preheat oven to 350°F.
  • Dice onion and add to a 2 qt casserole dish that has a lid.
  • Slice weiners into 1/2 inch thick coins and add to onion.
  • Mix soup into weiners & onion.
  • Add water and stir until soup is dissolved.
  • Add rice, black pepper, parsley & stir again.

4 turkey hot dogs
0.5 (1 ounce) package onion soup mix
2 tablespoons dark brown sugar
1/4 cup water
1 tablespoon Dijon mustard
1/3 cup catsup
1/8 cup triple sec (optional)

Steps:

  • Preheat oven to 350°F.
  • Cut hot dogs on a diagonal into 1 inch slices.
