- Heat the oil in a large saute pan over medium-high heat. Cook garlic until soft, about 1 minute. Add peppers and cook until they begin to soften, about 3 minutes. Add mushrooms, asparagus and tomatoes and cook until softened, an additional 5 minutes. Stir in flour and cook for 1 minute more. Add chicken stock, milk, salt and pepper and bring to a boil; reduce to a simmer and cook until liquid has thickened slightly, about 5 minutes. Stir in carrot strips.
- Meanwhile, cook pasta according to package directions; drain, reserving 1/2 cup pasta water. Toss pasta with vegetables and sauce. Add pasta water, if necessary, to loosen mixture. Serve garnished with Parmesan, parsley and basil.

- Bring a pot of salted water to a boil and cook the penne pasta to just before al dente (1 minute less than package instructions). Reserve ¼ cup of pasta water, drain and set aside.
- Meanwhile, heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the onion and cook until translucent; 1-2 minutes. Stir in vegetables in the following order, cooking and stirring for 1-2 minutes after each addition: Carrots, broccoli, red bell pepper, asparagus or zucchini, minced garlic. Add another tablespoon of butter to the skillet if it starts looking a little dry, usually just before the asparagus. Season vegetables with a pinch of salt and pepper, then transfer to a plate and set aside.
- To the skillet, add a tablespoon of butter, 3/4 cup chicken broth, ¼ cup lemon juice and ¼ of cup pasta water. Bring to a boil and simmer until slightly reduced; 2-3 minutes. Stir in the pasta and continue to simmer until sauce is reduced by half; 3-4 minutes. Stir in vegetables and season with salt and pepper as desired.
- Top with fresh grated Parmesan cheese and serve immediately. Garnish with fresh minced parsley and serve with lemon wedges if desired.

- Heat oven to 450 degrees F.
- Place the vegetables in a large mixing bowl. Add garlic, oregano, and thyme. Season with a big pinch of kosher salt and black pepper. Drizzle a good amount of extra virgin olive oil. Toss to coat.
- Transfer the vegetables to a large sheet pan (or two if needed). Spread them out well. Roast in heated oven for about 20 minutes (stirring half-way through).
- While the vegetables are roasting, cook the pasta in salted boiling water according to package (about 10 to 12 minutes). Reserve some of the pasta cooking water. Drain pasta.

- Heat oil over medium heat in large saucepan. Add onion, garlic, celery, and carrots. Saute until soft, about 6-8 minutes. Add basil, tomatoes, and bay leaves. Season with salt and pepper. Reduce to low heat, cover, and simmer for 1 hour. Add butter, and remove bay leaves.

WHOLE WHEAT PASTA PRIMAVERA
I love to find new and interesting vegetarian pasta dishes. The carmelized roasted vegetables in this dish add a really nice depth of flavor. This is a variation of a recipe I saw made on Giada DeLaurentis' "Every Day Italian". I like to try and use whole wheat pasta whenever I can in most of my pasta dishes. Not a BIG fan of zucchini, so I decided to substitute broccoli instead, cuz I LOVE it sooo much!. I also roasted a head of garlic in with the veggies, but that, of course, is optional. The original recipe added the cherry tomatoes in, UNROASTED, at the end. I did not read carefully enough, and roasted them right in the pan with everything else. They ended up being just fine roasted, but you may do either way. I catagorized this recipe under "vegan", but left in the grated cheese in as an option!

- Preheat oven to 450 degrees.
- In a large bowl, toss all the vegetables (minus the cherry tomatoes) with the olive oil, salt, pepper, italian spices, garlic powder and crushed red pepper, if using.
- Arrange the vegetables on 2 large baking sheets, making sure they are in an even layer.
- Bake until carrots are tender, and remaining vegetables begin to brown slightly, and carmelize.

- Toss the pasta and vegetables in a large bowl.

- Season again with salt and pepper to taste.
- Sprinkle with grated cheese of your choice and fresh basil leaves.

- 1. COOK Whole wheat pasta ,according to package directions. ADDING asparagus, bell peppers and peas during last 2 to 3 minutes of cooking. DRAIN , it and save (reserving 1/4 to 1/2 of pasta water for later. RETURN ...pasta to pot.
- 2. MEANWHILE ,sprinkle chicken with 1/2 tsp. salt 1/2 of the pepper. HEAT. 1tablespoon.. of olive oil,in a large cast iron fry pan, over medium heat-- high heat until hot....COOK chicken 8 to 10 minutes or until no longer pink in the center. Turning once ,remove chicken .COVER Loosely witfoil.
