1 ¼ cups warm water
1 egg
1 ½ tablespoons olive oil
3 tablespoons honey
1 tablespoon molasses
2 tablespoons chia seeds
3 ¾ cups whole wheat flour
1 ½ teaspoons salt
3 teaspoons active dry yeast
cooking spray
1 tablespoon butter, melted, or more as needed

Steps:

  • Place warm water, egg, olive oil, honey, molasses, chia seeds, whole wheat flour, salt, and yeast into a bread machine, in the order listed by the manufacturer. Run Dough cycle. Remove dough from the machine after the cycle is done, about 1 hour 30 minutes.
  • Spray a baking sheet with nonstick cooking spray. Form dough into 12 buns and arrange on the baking sheet. Let rise until doubled in size, about 55 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until buns are golden brown, about 14 minutes. Let cool for 10 minutes before transferring to a wire rack. Brush with melted butter.

1 cup water
1 egg
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
3/4 teaspoon salt
1/4 cup canola oil
1/8 cup sugar
3 teaspoons yeast

Steps:

  • Place all ingredients in your bread machine pan in order above. Select dough setting and press start.
  • When dough has risen, the machine will beep to signal the end of the dough cycle. Remove from bread pan and turn out dough onto floured surface. Shape dough into 12 balls or cut dough into 12 pieces and shape into 12 pieces.
  • Place balls approximately 2-3 inches apart onto greased baking sheet. Flatten balls for hamburger bun shape. Cover and let rise in warm oven 10-15 minutes until almost doubled.
  • Preheat oven to 400 degrees and bake 10-12 minutes until golden brown. Remove from oven and cool on racks. Split horizontally for use. These freeze well too.

This is from Bread Machine Magic. The best bun we ever had. When barbecuing, I usually divide the dough in half and make 4 burger buns and 6 hot dog buns.

1 cup water
1 egg
2 cups all-purpose flour
1 cup whole wheat flour
3/4 teaspoon salt
1/4 cup shortening
1/4 cup sugar
3 teaspoons yeast
1 tablespoon vital wheat gluten (optional)

Steps:

  • Place all ingredients in bread pan, select Dough setting, and press Start. (Vital Wheat Gluten is optional but the bread will rise higher with it.).
  • When dough has risen enough, the machine will beep. Remove bread pan, and turn out dough onto a floured countertop. Gently roll and shape the dough into a 12-inch rope.
  • With a sharp knife, divide dough into 8 pieces for hamburger buns or 12 pieces for hot dog buns.
  • Grease a baking sheet. Roll pieces of dough into balls and flatten for hamburger buns or shape into 6-inch rolls for hot dog buns. Place on prepared baking sheet. Cover and let rise in warm oven 10 to 15 minutes until almost doubled.
  • Preheat oven to 400°F Bake 10 to 12 minutes until golden brown (be careful mine cook pretty fast). Remove from oven and cool on racks. When ready to use, split buns horizontally. These will keep in plastic bag in the freezer for 3 to 4 weeks.

This easy recipe is from my Welbilt bread machine manual. The molasses and honey give the rolls a delicious, but not overly sweet taste. I usually cut this recipe in half but use the same amount of yeast. These rolls are always served for our Thanksgiving meal. Leftover (day old) rolls make perfect croutons or breadcrumbs.

2 tablespoons oil (read NOTE*)
2 tablespoons honey
2 tablespoons molasses
1 1/2 teaspoons salt
4 cups whole wheat flour
1 tablespoon active dry yeast

Steps:

  • Place the ingredients into the bread baking pan as recommended by your bread machine's manual. Use the DOUGH cycle setting.
  • To hand shape the roll, once the dough cycle is complete remove the dough to a lightly floured cutting board. Divide the dough into 12 equal pieces and shape into balls. Place the rolls into greased muffin tins, brush lightly with melted butter or butter substitute. Cover with a piece of wax paper and a clean cloth and let rise in a warm place for about 15-20 minutes.
  • Bake the rolls at 375°F for 15-20 minutes.
  • Refrigerate leftovers.
  • *NOTE: Here's a trick to measure the honey and molasses easily. By measuring the oil first, the oil coats the measuring utensil. Then when you measure out the honey and molasses the two ingredients slide off easily into the bread machine pan.

1 cup 2% low-fat milk
1/2 cup Egg Beaters egg substitute
4 tablespoons butter, melted
4 tablespoons water, warm 110F
0.5 (3 1/2 ounce) box vanilla instant pudding mix, about 1/4 cup
4 cups whole wheat pastry flour
1 tablespoon granulated sugar
1/2 teaspoon salt
3 teaspoons bread machine yeast

Steps:

  • Place all the ingredients in the bread pan of bread maching, in order as recommended by manufacturer. Process according to maufacturer's instructions for a dough setting and press start.
  • When the bread machine has completed the dough cycle, remove dough from pan and turn out onto a lightly oiled surface, sprayed with Pam. Knead enough to punch down. Form dough into a ball, cover with plastic wrap and let rest for 10 minutes.
  • After dough has rested, roll into a large rectangle. Sprinkle dough with cinnamon and Splenda. Roll up and cut into 1" slices. Place into a lightly greased baking dish, cover, and let rise in a warm place for approx 1 hour, or until doubled in size.
  • Bake at 325F for approx 20-25 minutes. Frost if desired with your favorite frosting.
