Categories     Bread     Fruit     Breakfast     Bake     High Fiber

Yield 12

Number Of Ingredients 10

1 ¼ cups whole wheat flour
1 teaspoon baking soda
½ teaspoon salt
pinch of nutmeg
¼ cup butter, at room temperature
1 cup Sucanat (sugar cane sugar)
3 large ripe bananas, mashed
2 eggs
½ cup chopped walnuts or pecans
cooking spray

Steps:

  • Preheat oven to 350 F. Spray inside of medium loaf pan completely. In a medium bowl stir together the flour, baking soda, salt and nutmeg. Set aside. In a large bowl beat together the butter and sugars until blended. Beat in the mashed banana and then beat in the eggs one at a time. Mixture will look curdled. Stir in the nuts. Add the dry ingredients and stir just until blended. Pour into prepared pan. Bake for 60 minutes or until toothpick or cake tester comes out clean. Cool in the pan for 10 minutes. Turn out on a wire rack to cool completely.

Tips:

  • To ensure your banana bread turns out moist and flavorful, use ripe bananas with plenty of brown spots.
  • For a sweeter bread, use more brown sugar or honey.
  • Add in your favorite nuts, such as walnuts, pecans, or almonds, for a crunchy texture.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes.
  • To prevent the bread from sticking to the pan, grease and flour the pan before pouring in the batter.
  • Bake the bread until a toothpick inserted into the center comes out clean.
  • Let the bread cool completely before slicing and serving.
